INFUSION INSTRUCTIONS:

 * In a heavy-bottomed pot, melt the clarified butter over medium-low heat.

 * Sauté the leeks and garlic until translucent but not browned.

 * Add the bone broth, heavy cream, and sunflower lecithin. Stir until homogenous.

 * Introduce the ground cannabis flower and rosemary sprig directly into the liquid.

 * Bring the mixture to a very gentle simmer, maintaining a temperature between 210°F and 220°F.

PREPARATION INSTRUCTIONS:

 * Maintain the gentle simmer for 4 hours. Use a digital thermometer to ensure the temperature does not exceed 225°F or drop below 200°F.

 * Stir every 30 minutes to ensure the flower remains submerged in the fat-rich liquid.

 * After 4 hours, remove from heat and allow to cool slightly.

 * Strain the entire mixture through a fine-mesh chinois or cheesecloth-lined sieve into a clean pot. Press the solids firmly to extract all infused fats.

 * Reheat the strained liquid gently. Season with fleur de sel and white pepper.
