 * Strain through a fine-mesh sieve and cheesecloth.

 * Chill until solid, then measure 1/4 cup for the recipe.

PREPARATION INSTRUCTIONS:

 * Preheat oven to 400°F. Line two baking sheets with parchment paper.

 * In a medium saucepan, combine the water, the 1/4 cup of infused butter, salt, pepper, and nutmeg. Bring to a boil over medium heat.

 * Once the butter is melted and the mixture is boiling, add the flour all at once.

 * Stir vigorously with a wooden spoon until the flour is fully incorporated and the dough pulls away from the sides, forming a ball. Continue cooking for 1-2 minutes to dry the dough slightly.

 * Transfer the dough to a bowl and let cool for 3 minutes.

 * Add the eggs one at a time, beating thoroughly after each addition until the dough is smooth and glossy.

 * Fold in 1 cup of the Gruyère cheese and the lemon zest.

 * Using a pastry bag or two spoons, drop rounded tablespoons of dough onto the prepared baking sheets, spaced 2 inches apart.

 * Sprinkle the remaining 1/4 cup of cheese over the tops.

 * Bake for 20-25 minutes until the gougères are puffed and golden brown.

 * Immediately pierce each puff with a small knife to let steam escape.
