INGREDIENTS:

 * 7 grams high-quality cannabis flower (for the infusion base)

 * 1 cup unsalted grass-fed butter (you will use 1/2 cup for this recipe)

 * 1 cup granulated cane sugar

 * 2 tbsp fresh lime juice

 * 1 tbsp fresh lime zest (finely grated)

 * 1/4 tsp sea salt

 * 1/4 tsp sunflower lecithin

 * 1/2 cup white chocolate chips (for optional drizzle)

DECARBOXYLATION INSTRUCTIONS:

 * Preheat oven to 240°F.

 * Break the cannabis flower into small, uniform pieces.

 * Spread in a thin layer on a parchment-lined baking sheet.

 * Bake for 30-40 minutes until the material is a light toasted brown.

 * Cool completely before beginning the butter infusion.

INFUSION INSTRUCTIONS:

 * Melt 1 cup of butter in a double boiler over low heat.

 * Add the decarboxylated flower.

 * Maintain heat between 160°F and 180°F for 3 hours, stirring occasionally.

 * Strain through a fine-mesh sieve and cheesecloth.

 * Measure exactly 1/2 cup of this infused butter for the recipe. Store the rest in the refrigerator.

PREPARATION INSTRUCTIONS:

 * Line a small baking sheet with a silicone mat or parchment paper.

 * In a heavy-bottomed stainless steel saucepan, combine the 1/2 cup infused butter, sugar, and sea salt.

 * Heat over medium heat, stirring constantly with a silicone spatula until the butter is melted and combined with the sugar.

 * Attach a candy thermometer to the side of the pan.

 * Continue to cook, stirring frequently, until the mixture reaches 300°F (hard-crack stage). The mixture will turn a deep golden amber.

 * Once it reaches 300°F, immediately remove from heat.

 * Quickly stir in the lime juice, lime zest, and sunflower lecithin. The mixture will bubble vigorously; continue stirring until smooth.

 * Pour the toffee onto the prepared baking sheet and spread quickly into a thin layer.

 * If using white chocolate, melt and drizzle over the toffee while it is still warm.

 * Allow to cool completely at room temperature for at least 1 hour until hard.

 * Break into 20 uniform pieces using a kitchen mallet or the back of a heavy spoon.

CHEF TIPS:

The hard-crack stage is the only way to achieve a professional toffee texture. If you remove the heat at 285°F, it will be sticky and chewy. Be patient and wait for the thermometer to hit exactly 300°F for that satisfying, glass-like snap.
