Blackened Ribeye with Cannabis Garlic Butter and Skillet Potatoes

Step 1 — Decarboxylation

Ingredients

  • 3.5 grams cannabis flower (medium grind)

Instructions

  1. Preheat oven to 240°F (115°C).
  2. Line a baking sheet with parchment paper.
  3. Spread cannabis evenly across tray.
  4. Bake 35–40 minutes, stirring once halfway.
  5. Remove and allow to cool.

Step 2 — Cannabis Garlic Butter

Ingredients

  • 1 cup unsalted butter
  • 1 cup water
  • Decarboxylated cannabis
  • 3 cloves garlic, minced
  • 1 tbsp chopped parsley
  • ½ tsp black pepper

Instructions

  1. Melt butter and water together over very low heat.
  2. Add decarboxylated cannabis.
  3. Maintain temperature 160–180°F.
  4. Simmer gently 2 hours, stirring occasionally.
  5. Strain through cheesecloth.
  6. Refrigerate until butter solidifies.
  7. Remove butter layer and discard water.
  8. Mix softened infused butter with garlic, parsley, and black pepper.

Step 3 — Blackened Ribeye and Skillet Potatoes

Ingredients

  • 2 ribeye steaks
  • 2 tbsp olive oil
  • 1 lb baby potatoes, halved
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp cayenne
  • ½ tsp black pepper
  • Salt to taste
  • 2 tbsp cannabis garlic butter

Instructions

  1. Season Steak
    Pat ribeyes dry and coat with paprika, garlic powder, cayenne, salt, and pepper.

  2. Cook Potatoes
    Heat olive oil in cast iron skillet.
    Add potatoes and cook 10–12 minutes until crispy.

  3. Remove Potatoes
    Transfer to plate.

  4. Sear Steak
    Increase heat to high.
    Add ribeyes and sear 3–4 minutes per side for medium-rare.

  5. Rest Steak
    Remove from pan and rest 5 minutes.

  6. Return Potatoes
    Add potatoes back to skillet to warm.

  7. Finish with Infusion
    Place 1 tbsp cannabis garlic butter on each steak so it melts over the meat.

  8. Serve
    Slice steak and plate with skillet potatoes.
