CANNABIS-INFUSED BRAISED BEEF AND BUTTERMILK MASH FAMILY SKILLET

Big, rich, family-style comfort food built for passing around the table. Tender braised beef cooks low and slow with onions, carrots, and garlic until it falls apart into a deep savory gravy. It’s served over creamy from-scratch buttermilk mashed potatoes and finished with cannabis thyme butter melted right into the pan.

Step 1 — Decarboxylation

Ingredients

3.5 g cannabis flower (medium grind)

Instructions

  1. Preheat oven to 240°F / 115°C.
  2. Spread cannabis evenly on a parchment-lined tray.
  3. Bake 35–40 minutes, stirring halfway through.
  4. Allow to cool completely.

Step 2 — Cannabis Thyme Butter

Ingredients

1 cup unsalted butter
1 cup water
Decarboxylated cannabis
1 tbsp chopped fresh thyme
½ tsp black pepper
2 cloves garlic, minced

Instructions

  1. Melt butter and water in a saucepan over very low heat.
  2. Add cannabis, thyme, pepper, and garlic.
  3. Maintain 160–180°F.
  4. Simmer gently 2 hours, stirring occasionally.
  5. Strain through cheesecloth.
  6. Refrigerate until butter solidifies.
  7. Remove butter layer and discard water.

Step 3 — Braised Beef

Ingredients

3 lbs chuck roast, cut into large chunks
2 tbsp olive oil
1 large onion, sliced
3 carrots, chopped
3 celery stalks, chopped
4 cloves garlic, smashed
2 tbsp tomato paste
2 cups beef stock
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp salt
1 tsp black pepper

Instructions

  1. Preheat oven to 325°F.
  2. Season beef with salt, pepper, and smoked paprika.
  3. Heat olive oil in a Dutch oven or deep oven-safe skillet.
  4. Sear beef 3–4 minutes per side until deeply browned.
  5. Remove beef and set aside.
  6. Add onion, carrots, and celery. Cook 5 minutes.
  7. Add garlic and tomato paste. Cook 1 minute.
  8. Pour in beef stock and Worcestershire, scraping the pan.
  9. Return beef to the pot.
  10. Cover and braise 2½–3 hours until fork tender.

Step 4 — Buttermilk Mashed Potatoes

Ingredients

3 lbs Yukon gold potatoes
½ cup buttermilk
4 tbsp butter
Salt and black pepper to taste

Instructions

  1. Peel and cut potatoes into chunks.
  2. Boil in salted water 15–18 minutes until tender.
  3. Drain well.
  4. Mash with buttermilk and butter until smooth.
  5. Season with salt and pepper.

Step 5 — Finish the Family Skillet

Ingredients

Braised beef
Buttermilk mashed potatoes
2 tbsp cannabis thyme butter
Fresh parsley

Instructions

  1. Spoon mashed potatoes onto a large serving platter or family skillet.
  2. Top with braised beef and plenty of gravy.
  3. Melt 2 tbsp cannabis thyme butter over the hot beef.
  4. Finish with chopped parsley and cracked black pepper.
