CANNABIS-INFUSED BRAISED CHICKEN THIGHS WITH OLIVES, TOMATOES, AND HERBED FARRO


A hearty Mediterranean family dinner with deep savory flavor and a polished centerpiece look. Bone-in chicken thighs are braised with garlic, tomatoes, olives, and white wine until tender, then served over nutty herbed farro and finished with cannabis rosemary butter. Rustic, rich, and built for the middle of the table.

Step 1 — Decarboxylation


Ingredients


3.5 g cannabis flower (medium grind)


Instructions


1. Preheat oven to 240°F / 115°C.



2. Spread cannabis evenly on a parchment-lined tray.



3. Bake 35–40 minutes, stirring halfway through.



4. Allow to cool completely.

Step 2 — Cannabis Rosemary Butter


Ingredients


1 cup unsalted butter

1 cup water

Decarboxylated cannabis

1 tbsp chopped fresh rosemary

½ tsp black pepper

1 garlic clove, minced

1 tsp lemon zest


Instructions


1. Melt butter and water in a saucepan over very low heat.



2. Add cannabis, rosemary, pepper, garlic, and lemon zest.



3. Maintain 160–180°F.



4. Simmer gently 2 hours, stirring occasionally.



5. Strain through cheesecloth.



6. Refrigerate until butter solidifies.



7. Remove butter layer and discard water.

Step 3 — Braise the Chicken


Ingredients


6 bone-in chicken thighs

1 tbsp olive oil

1 small onion, sliced

4 garlic cloves, smashed

1 cup cherry tomatoes

¾ cup pitted kalamata olives

½ cup dry white wine

1 cup chicken stock

1 tsp dried oregano

1 tsp salt

½ tsp black pepper


Instructions


1. Preheat oven to 350°F.



2. Season chicken with salt, pepper, and oregano.



3. Heat olive oil in a deep skillet or braiser over medium-high heat.



4. Sear chicken 4 minutes per side until golden.



5. Remove chicken and set aside.



6. Add onion and garlic. Cook 3–4 minutes.



7. Add tomatoes and olives. Cook 2 minutes.



8. Pour in white wine and chicken stock.



9. Return chicken to the pan.



10. Cover and braise 35–40 minutes until tender.



11. Stir in 1 tbsp cannabis rosemary butter right at the end.

Step 4 — Herbed Farro


Ingredients


1½ cups farro

4 cups chicken stock or water

1 tbsp olive oil

1 tbsp chopped parsley

1 tbsp chopped dill

Salt to taste


Instructions


1. Bring stock or water to a boil.



2. Add farro and reduce to a simmer.



3. Cook 25–30 minutes until tender.



4. Drain if needed.



5. Toss with olive oil, parsley, dill, and salt.

Step 5 — Finish and Plate


Ingredients


Herbed farro

Braised chicken

Pan sauce

1 tbsp cannabis rosemary butter

Fresh parsley

Cracked black pepper

Lemon wedges


Instructions


1. Spoon farro onto a large platter or shallow family dish.



2. Arrange chicken thighs over the farro.



3. Spoon tomatoes, olives, and braising sauce over everything.



4. Melt remaining cannabis rosemary butter and drizzle lightly.



5. Finish with parsley, black pepper, and lemon wedges.
