Cannabis-Infused Caramelized Onion & Gruyère Stuffed Meatloaf

Classic comfort reworked: grass-fed beef meatloaf wrapped around slow-caramelized onions and melted Gruyère, glazed with a smoked tomato reduction finished with precisely dosed cannabis-infused olive oil. Juicy center. Structured slices. Elevated execution.


A Note on Dosing

This recipe makes 8 slices.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into the tomato glaze)
~6–7mg per slice

Alternative Dosing:
• 1g flower → ~4mg per slice
• 2g flower → ~9mg per slice

All THC is evenly incorporated into the glaze before baking.

Step 1: Cannabis-Infused Olive Oil (For Glaze)

Ingredients

• 1.5g cannabis flower
• ½ cup olive oil

Decarboxylation

  1. Preheat oven to 225°F (107°C).
  2. Grind cannabis evenly to medium consistency.
  3. Spread on parchment-lined tray in thin layer.
  4. Bake 35–40 minutes until lightly toasted and aromatic.
  5. Cool completely.

Infusion

  1. Heat olive oil on lowest possible heat (under 180°F).
  2. Add decarbed cannabis.
  3. Maintain low heat for 2 hours. Do not simmer.
  4. Strain through cheesecloth into clean container.
  5. Reserve 3 tablespoons for glaze.

Step 2: Caramelized Onion Filling

Ingredients

• 2 large yellow onions, thinly sliced
• 1 tbsp butter
• Pinch salt

Method

  1. Melt butter over medium-low heat.
  2. Add onions and salt.
  3. Cook slowly 30–40 minutes, stirring occasionally, until deeply golden and jam-like.
  4. Cool completely.

Step 3: Meatloaf Base

Ingredients

• 2 lbs ground beef (80/20)
• 2 eggs
• ½ cup breadcrumbs
• ¼ cup whole milk
• 2 cloves garlic, minced
• 1 tsp salt
• 1 tsp cracked black pepper
• ½ tsp smoked paprika
• 1 cup shredded Gruyère

Method

  1. Preheat oven to 350°F (177°C).
  2. In bowl, combine eggs, milk, breadcrumbs, garlic, salt, pepper, and paprika.
  3. Add ground beef and gently mix until just combined. Do not overwork.
  4. On parchment, press mixture into rectangle about 1 inch thick.
  5. Spread caramelized onions down center.
  6. Sprinkle Gruyère over onions.
  7. Roll carefully into loaf shape, sealing edges.
  8. Transfer to baking sheet.

Step 4: Smoked Tomato Glaze

Ingredients

• ¾ cup tomato paste
• 2 tbsp brown sugar
• 1 tbsp apple cider vinegar
• 3 tbsp cannabis-infused olive oil
• Pinch smoked paprika

Method

  1. Whisk all ingredients until smooth.
  2. Brush half over meatloaf before baking.

Step 5: Bake

  1. Bake 45 minutes.
  2. Remove and brush remaining glaze on top.
  3. Bake additional 15–20 minutes until internal temp reaches 160°F.
  4. Rest 10 minutes before slicing.
