CANNABIS-INFUSED CHEESY JALAPEÑO CORNBREAD POPPERS

Bite-sized cornbread muffins loaded with cheddar, roasted jalapeños, and brushed with warm cannabis-infused honey butter. These poppers bake up fluffy inside with golden crisp edges and just enough heat from the peppers to keep people coming back for another. Step 1 — Decarboxylation

Ingredients

7 g cannabis flower

Instructions

  1. Preheat oven to 240°F (115°C).
  2. Break cannabis into small pieces.
  3. Spread evenly on parchment-lined baking sheet.
  4. Bake 40 minutes, stirring halfway through.
  5. Allow cannabis to cool completely.

Step 2 — Cannabis Butter Infusion

Ingredients

1 cup unsalted butter
1 cup water
Decarboxylated cannabis

Instructions

  1. Combine butter and water in saucepan on low heat.
  2. Stir in decarboxylated cannabis once butter melts.
  3. Simmer gently 2–3 hours, stirring occasionally.
  4. Avoid boiling.
  5. Strain through cheesecloth into container.
  6. Refrigerate until butter solidifies.
  7. Remove hardened butter.

Step 3 — Cornbread Batter

Ingredients

1 cup cornmeal
1 cup flour
1 tbsp sugar
1 tsp baking powder
½ tsp salt
1 cup milk
1 egg
2 tbsp melted butter
1 cup shredded cheddar
1 jalapeño, finely diced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In bowl combine cornmeal, flour, sugar, baking powder, and salt.
  3. In separate bowl whisk milk, egg, and melted butter.
  4. Combine wet and dry ingredients.
  5. Fold in cheddar and jalapeño.

Step 4 — Bake Poppers

Instructions

  1. Grease mini muffin pan.
  2. Fill each cavity about ¾ full.
  3. Bake 12–14 minutes until golden brown.

Step 5 — Infused Honey Butter Finish

Ingredients

2 tbsp cannabis butter
1 tbsp honey

Instructions

  1. Melt cannabis butter on low heat.
  2. Stir in honey.
  3. Brush warm cornbread poppers with infused honey butter.

Using 2 tbsp cannabis butter

90–100 mg THC total
