CANNABIS-INFUSED CHICKEN POT PIE WITH FLAKY HERB CRUST

A true hearty family dinner made completely from scratch. Tender chicken, carrots, peas, celery, and onion are folded into a rich velvety cream gravy, then baked under a deeply golden herb crust. Finished with cannabis thyme butter in the filling, this is the kind of table-center meal everybody wants a second scoop of.

Step 1 — Decarboxylation

Ingredients

3.5 g cannabis flower (medium grind)

Instructions

  1. Preheat oven to 240°F / 115°C.
  2. Spread cannabis evenly on a parchment-lined tray.
  3. Bake 35–40 minutes, stirring halfway through.
  4. Allow to cool completely.

Step 2 — Cannabis Thyme Butter

Ingredients

1 cup unsalted butter
1 cup water
Decarboxylated cannabis
1 tbsp chopped fresh thyme
½ tsp black pepper
2 cloves garlic, minced

Instructions

  1. Melt butter and water in a saucepan over very low heat.
  2. Add cannabis, thyme, pepper, and garlic.
  3. Maintain 160–180°F.
  4. Simmer gently 2 hours, stirring occasionally.
  5. Strain through cheesecloth.
  6. Refrigerate until butter solidifies.
  7. Remove butter layer and discard water.

Step 3 — From-Scratch Pie Dough

Ingredients

2½ cups flour
1 tsp salt
1 cup cold unsalted butter, cubed
6–8 tbsp ice water
1 tsp chopped thyme

Instructions

  1. Mix flour, salt, and thyme in a bowl.
  2. Cut in cold butter until crumbly.
  3. Add ice water a tablespoon at a time until dough forms.
  4. Divide into two disks.
  5. Wrap and chill 30 minutes.

Step 4 — Chicken Pot Pie Filling

Ingredients

2 cups cooked shredded chicken
1 onion, diced
2 carrots, diced
2 celery stalks, diced
1 cup peas
3 tbsp flour
2 cups chicken stock
1 cup heavy cream
2 tbsp cannabis thyme butter
1 tbsp olive oil
1 tsp salt
1 tsp black pepper

Instructions

  1. Heat olive oil in a large skillet.
  2. Cook onion, carrots, and celery 6 minutes until softened.
  3. Stir in flour and cook 1 minute.
  4. Slowly whisk in chicken stock and cream.
  5. Simmer 5 minutes until thickened.
  6. Stir in chicken, peas, salt, and pepper.
  7. Finish with 2 tbsp cannabis thyme butter.

Step 5 — Assemble and Bake

Ingredients

Prepared dough
Prepared filling
1 egg, beaten

Instructions

  1. Preheat oven to 400°F.
  2. Roll one dough disk and fit into a deep pie dish or family baking dish.
  3. Add the filling.
  4. Roll out top crust and place over filling.
  5. Crimp edges and cut steam slits.
  6. Brush with beaten egg.
  7. Bake 35–40 minutes until deep golden brown.
  8. Rest 10 minutes before serving.
