Cannabis-Infused Crispy Chicken Parmesan with Burrata

Pan-fried parmesan-crusted chicken cutlets finished with roasted tomato basil sauce, melted mozzarella, and torn burrata. The cannabis infusion is folded into a garlic basil olive oil drizzle added just before serving for even distribution and preserved terpene aroma.


A Note on Dosing

This recipe makes 4 servings.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into basil olive oil drizzle)
~13–14mg per serving

Alternative Dosing:
• 1g flower → ~9mg per serving
• 2g flower → ~18mg per serving

The infused oil is distributed evenly across the plated portions.

Step 1: Cannabis-Infused Olive Oil

Ingredients

• 1.5g cannabis flower
• ½ cup olive oil

Decarboxylation

  1. Preheat oven to 225°F (107°C).
  2. Grind cannabis to medium consistency.
  3. Spread on parchment-lined baking sheet.
  4. Bake 35–40 minutes until aromatic and lightly golden.
  5. Allow to cool completely.

Infusion

  1. Heat olive oil over very low heat (below 180°F).
  2. Add decarboxylated cannabis.
  3. Maintain gentle heat for 2 hours, stirring occasionally.
  4. Strain through cheesecloth.
  5. Reserve 3 tablespoons for basil drizzle.

Step 2: Roasted Tomato Basil Sauce

Ingredients

• 1½ cups crushed tomatoes
• 2 cloves garlic, minced
• 1 tbsp olive oil
• ½ tsp salt
• ¼ tsp black pepper
• ½ tsp dried oregano
• ¼ cup fresh basil, chopped

Method

  1. Heat olive oil in saucepan over medium heat.
  2. Add garlic and cook 30 seconds until fragrant.
  3. Stir in crushed tomatoes, oregano, salt, and pepper.
  4. Simmer 15 minutes until slightly thickened.
  5. Stir in fresh basil and remove from heat.

Step 3: Parmesan Chicken Cutlets

Ingredients

• 2 large chicken breasts (butterflied into 4 cutlets)
• 1 cup breadcrumbs
• ½ cup grated parmesan
• 2 eggs
• ½ cup flour
• 1 tsp salt
• ½ tsp black pepper
• Oil for frying

Method

  1. Pound chicken lightly to even thickness.
  2. Season with salt and pepper.
  3. Prepare dredging stations: flour, beaten eggs, breadcrumb-parmesan mix.
  4. Coat chicken in flour → egg → breadcrumb mixture.
  5. Fry in skillet with oil at 350°F for 3–4 minutes per side until golden.
  6. Transfer to baking tray.

Step 4: Melt Cheese

Ingredients

• 1 cup shredded mozzarella
• 1 ball burrata

Method

  1. Spoon roasted tomato sauce over each cutlet.
  2. Add mozzarella on top.
  3. Bake at 375°F for 8–10 minutes until melted.
  4. Tear burrata and place over finished chicken.

Step 5: Basil Cannabis Oil Drizzle

Ingredients

• 3 tbsp cannabis-infused olive oil
• 2 tbsp finely chopped basil
• Pinch sea salt

Method

  1. Warm oil slightly (do not overheat).
  2. Stir in basil and salt.
  3. Drizzle evenly over plated chicken parmesan.
