Step 1 — Decarboxylation

Ingredients

7 g cannabis flower
Oven

Instructions

  1. Preheat oven to 240°F (115°C).
  2. Break cannabis into small pea-sized pieces.
  3. Spread evenly on parchment-lined baking sheet.
  4. Bake 40 minutes, gently stirring halfway through.
  5. Remove and allow to cool completely.

Step 2 — Cannabis Butter Infusion

Ingredients

1 cup unsalted butter
1 cup water
Decarboxylated cannabis

Instructions

  1. Add butter and water to a saucepan on low heat.
  2. When butter melts, add decarboxylated cannabis.
  3. Simmer gently 2–3 hours, never letting it boil.
  4. Stir occasionally.
  5. Strain through cheesecloth into a container.
  6. Refrigerate until solid.
  7. Remove hardened butter from water.

Step 3 — Mac & Cheese Filling

Ingredients

2 cups cooked elbow macaroni
2 tbsp cannabis butter
1 tbsp regular butter
1 cup shredded sharp cheddar
½ cup mozzarella
¼ cup cream
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste

Instructions

  1. Melt cannabis butter and regular butter in a saucepan.
  2. Add cream and warm gently.
  3. Stir in cheeses until melted and smooth.
  4. Season with garlic powder, onion powder, salt, and pepper.
  5. Fold in cooked macaroni.
  6. Spread mixture into a shallow dish.
  7. Refrigerate 1 hour until firm.

Step 4 — Form the Bites

Ingredients

Chilled mac & cheese mixture

Instructions

  1. Scoop tablespoon-sized portions.
  2. Roll into tight balls.
  3. Place on parchment-lined tray.
  4. Freeze 20 minutes to firm.

Step 5 — Breading

Ingredients

1 cup flour
2 eggs, beaten
1½ cups panko breadcrumbs
½ tsp smoked paprika
½ tsp salt

Instructions

  1. Mix paprika and salt into breadcrumbs.
  2. Roll each mac ball in flour.
  3. Dip in beaten egg.
  4. Coat thoroughly in panko.
  5. Place back on tray.

Step 6 — Frying

Vegetable oil for frying

Instructions

  1. Heat oil to 350°F (175°C).
  2. Fry bites in batches 2–3 minutes until golden brown.
  3. Remove and drain on paper towels.

Dosing Guidance

If the butter contains ~700 mg THC total and only 2 tbsp are used, the batch contains roughly 90–100 mg total THC.

If you make 20 bites, each bite contains approximately 4–5 mg THC.
