Cannabis-Infused Emerald Basil Lemon Shortbread Ice Cream Sandwiches

These St. Patrick’s Day ice cream sandwiches pair crisp basil-lemon shortbread cookies with silky vanilla bean ice cream and a thin emerald cannabis-infused white chocolate shell. The infusion lives entirely in the chocolate coating for clean texture and consistent dosing.

Cool, elegant, and not your typical green dessert.


A Note on Dosing

This recipe makes 12 ice cream sandwiches.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into white chocolate shell)
~4–5mg per sandwich
~8–10mg per 2-sandwich serving

For lighter servings:
• 1g flower → ~6–7mg per 2-sandwich serving
• 2g flower → ~12–14mg per 2-sandwich serving


Step 1: Cannabis-Infused Cocoa Butter (or Coconut Oil)

Ingredients

• 1.5g cannabis flower
• 1/4 cup cocoa butter or refined coconut oil

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Melt cocoa butter gently to 160–170°F.
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly.

This fat contains the full THC content.


Step 2: Basil Lemon Shortbread (Non-Infused)

Ingredients

• 1 cup butter, softened
• 3/4 cup powdered sugar
• 2 cups flour
• Zest of 1 lemon
• 1 tablespoon finely minced fresh basil
• Pinch salt

Preheat oven to 325°F.

Cream butter and sugar until smooth.
Mix in lemon zest and basil.
Fold in flour and salt.

Roll dough and cut into 24 equal rounds.

Bake 14–16 minutes until lightly golden.
Cool completely.


Step 3: Assemble

Scoop vanilla bean ice cream between two shortbread cookies.

Freeze 30 minutes to firm.


Step 4: Emerald White Chocolate Shell (Infused)

Ingredients

• 2 cups white chocolate chips
• 2 tablespoons cannabis-infused cocoa butter
• Small pinch matcha (for emerald tint)

Melt white chocolate gently.
Stir in infused fat until smooth.
Add matcha for subtle emerald tone.

Dip half of each frozen sandwich into chocolate.

Freeze until set.
