St. Patrick’s Day Sparkling Cocktail with Infused Thyme Syrup
Fresh blackberries muddled with thyme and lemon, shaken with ice, topped with sparkling water, and balanced with a measured pour of cannabis-infused thyme simple syrup. Bright, herbal, and perfectly portioned for a festive emerald drink.
A Note on Dosing
This recipe makes 8 cocktails.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into thyme syrup)
~6–7mg per cocktail
Alternative Dosing:
• 1g flower → ~4–5mg per cocktail
• 2g flower → ~9–10mg per cocktail
Terpene Pairing Suggestion: Limonene-dominant strain enhances citrus brightness; Pinene complements thyme.
Step 1: Cannabis-Infused Thyme Simple Syrup
Ingredients
• 1.5g cannabis flower
• 1 cup water
• 1 cup sugar
• 4 fresh thyme sprigs
Decarboxylation Method
- Preheat oven to 225°F (107°C).
- Break cannabis into small pieces.
- Spread on parchment-lined baking sheet.
- Bake 35–40 minutes.
- Cool completely.
Infusion Method
- In saucepan, combine water and sugar.
- Heat until sugar dissolves completely.
- Remove from heat.
- Add decarboxylated cannabis and thyme sprigs.
- Cover and steep 2 hours, keeping temperature under 180°F if reheating briefly.
- Strain thoroughly through cheesecloth.
- Refrigerate.
Shelf life: 10 days refrigerated.
Step 2: Cocktail Build (Per Drink)
Ingredients
• 4 fresh blackberries
• ½ ounce fresh lemon juice
• 1 ounce cannabis-infused thyme syrup
• Ice
• Sparkling water
• Fresh thyme sprig for garnish
- Muddle blackberries in shaker.
- Add lemon juice and infused syrup.
- Fill shaker with ice and shake 10–15 seconds.
- Strain into ice-filled glass.
- Top with sparkling water.
- Garnish with thyme and additional blackberry.
