Cannabis-Infused Emerald Blue Cheese & Pear Phyllo Cigars

These St. Patrick’s Day phyllo cigars are filled with creamy blue cheese, diced pear, and toasted walnuts, then baked until shatteringly crisp. They’re finished with a warm emerald cannabis-infused thyme honey drizzle that delivers precise dosing without softening the pastry.

A Note on Dosing

This recipe makes 16 phyllo cigars.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into thyme honey)
~3–4mg per cigar
~7–8mg per 2-cigar serving

For lighter servings:
• 1g flower → ~5–6mg per 2-cigar serving
• 2g flower → ~10–12mg per 2-cigar serving


Step 1: Cannabis-Infused Thyme Honey

Ingredients

• 1.5g cannabis flower
• 1/2 cup honey
• 2 sprigs fresh thyme

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Place honey and thyme in small jar.
Stir in decarboxylated cannabis.

Set jar in gently simmering water bath (water below lid) for 2 hours.
Strain thoroughly while warm.

This honey contains the full THC content.


Step 2: Filling (Non-Infused)

Ingredients

• 4 ounces blue cheese, crumbled
• 1 ripe pear, finely diced
• 1/4 cup toasted walnuts, chopped
• Pinch cracked black pepper

Mix gently until combined.


Step 3: Phyllo Assembly (Non-Infused)

Ingredients

• 8 sheets phyllo dough
• 1/4 cup melted butter

Preheat oven to 375°F.

Cut phyllo sheets lengthwise into strips.

Brush lightly with melted butter.
Place small line of filling at one end and roll tightly into cigar shape.

Place seam-side down on parchment.

Bake 14–16 minutes until golden and crisp.


Step 4: Emerald Finish

Warm cannabis-infused thyme honey slightly until pourable.

Drizzle evenly and lightly over each baked cigar.

Finish with:

• Micro thyme
• Light flaky salt

Serve warm.
