Cannabis-Infused Emerald Cheddar & Chive Gougères

Gougères are light, airy French cheese puffs traditionally served warm as elegant appetizers. This St. Patrick’s Day version folds sharp Irish cheddar and fresh chives into the choux pastry for a naturally golden-green finish. The cannabis infusion is incorporated into the butter used in the dough, ensuring even distribution without affecting structure.

A Note on Dosing

This recipe makes 30 gougères.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into butter)
~1.5–2mg per puff
~6–8mg per 4-puff serving

For lighter servings:
• 1g flower → ~4–5mg per 4-puff serving
• 2g flower → ~9–10mg per 4-puff serving

Step 1: Cannabis-Infused Butter

Ingredients

• 1.5g cannabis flower
• 1/2 cup unsalted butter

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Melt butter over low heat (160–180°F).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly and cool slightly before using.

This butter contains the full THC content.

Step 2: Choux Pastry (Infused)

Ingredients

• 1/2 cup cannabis-infused butter
• 1 cup water
• 1 cup all-purpose flour
• 4 eggs
• 1 cup grated sharp Irish cheddar
• 2 tablespoons finely chopped chives
• Pinch salt

Preheat oven to 400°F.

In saucepan, combine infused butter and water.
Bring just to a simmer.

Remove from heat and stir in flour all at once.
Return to heat and stir until dough forms and pulls from sides.

Transfer to mixing bowl.
Beat in eggs one at a time until smooth and glossy.

Fold in cheddar, chives, and salt.

Step 3: Pipe & Bake

Pipe small mounds onto parchment-lined sheet.

Bake 20–25 minutes until puffed and golden.
Do not open oven during baking.

Cool slightly before serving.
