Cannabis-Infused Emerald Chocolate Covered Mint Oreos

Chocolate-dipped sandwich cookies are nostalgic, snackable, and perfect for clean portioning. This St. Patrick’s Day version coats mint crème sandwich cookies in glossy emerald white chocolate and finishes them with dark chocolate drizzle. The cannabis infusion is incorporated into the coating chocolate for smooth texture and even distribution without altering the cookie structure.

A Note on Dosing

This recipe makes 24 chocolate-covered cookies.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into coating chocolate)
~2–2.5mg per cookie
~8–10mg per 4-cookie serving

For lighter servings:
• 1g flower → ~6–7mg per 4-cookie serving
• 2g flower → ~12–14mg per 4-cookie serving

Step 1: Cannabis-Infused Coconut Oil

Ingredients

• 1.5g cannabis flower
• 1/4 cup coconut oil

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Warm coconut oil to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly and cool slightly.

This oil contains the full THC content.

Step 2: Emerald Chocolate Coating (Infused)

Ingredients

• 3 cups white chocolate chips
• 2 tablespoons cannabis-infused coconut oil
• Small pinch matcha or green food tint

Melt white chocolate gently in 20-second bursts.
Stir in measured cannabis-infused coconut oil until smooth.
Add matcha for light emerald tone.

Step 3: Dip

Ingredients

• 24 mint sandwich cookies

Dip each cookie fully into emerald chocolate.
Tap off excess.
Place on parchment-lined sheet.

Step 4: Dark Chocolate Drizzle

Ingredients

• 4 ounces dark chocolate, melted

Drizzle thin lines over coated cookies.
Allow to set completely at room temperature.
