Cannabis-Infused Emerald Chocolate Mint Pretzel Slabs

Crunchy, glossy, and built for sharing. These St. Patrick’s Day pretzel slabs layer salted mini pretzels under a thick emerald mint white chocolate sheet, finished with dark chocolate drizzle and gold sparkle. The cannabis infusion is incorporated into the mint chocolate layer for clean structure and consistent dosing in every breakable shard.


A Note on Dosing

This recipe makes 16 slab portions.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into mint chocolate layer)
~3–4mg per portion
~6–8mg per 2-portion serving

For lighter servings:
• 1g flower → ~4–5mg per 2-portion serving
• 2g flower → ~9–10mg per 2-portion serving


Step 1: Cannabis-Infused Coconut Oil

Ingredients

• 1.5g cannabis flower
• 1/4 cup coconut oil

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Warm coconut oil to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly.

This oil contains the full THC content.


Step 2: Emerald Mint Chocolate Layer (Infused)

Ingredients

• 4 cups white chocolate chips
• 2 tablespoons cannabis-infused coconut oil
• 1/2 teaspoon peppermint extract
• Small pinch matcha for emerald tint

Melt white chocolate gently in 20-second bursts.
Stir in infused oil until smooth.
Add peppermint extract and matcha.


Step 3: Pretzel Base (Non-Infused)

Ingredients

• 3 cups mini pretzels

Line a sheet pan with parchment.
Arrange pretzels in even single layer.

Pour emerald mint chocolate evenly over pretzels.
Spread to edges.


Step 4: Dark Chocolate Finish

Ingredients

• 6 ounces dark chocolate, melted

Drizzle over slab in thin ribbons.
Sprinkle lightly with:

• Gold sanding sugar
• Crushed pretzel crumbs

Allow to set completely at room temperature.


Step 5: Break & Portion

Break into 16 even slab pieces for consistent dosing.
