These St. Patrick’s Day hand pies are stuffed with creamy coconut curry vegetables and finished with a glossy emerald cannabis-infused scallion oil brushed over the crust. The infusion lives entirely in the finishing oil for precise portion control and crisp pastry texture.
A Note on Dosing
This recipe makes 12 hand pies.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into scallion oil)
~4–5mg per hand pie
~8–10mg per 2-hand pie serving
For lighter servings:
• 1g flower → ~6–7mg per 2-hand pie serving
• 2g flower → ~12–14mg per 2-hand pie serving
Step 1: Cannabis-Infused Scallion Oil
Ingredients
• 1.5g cannabis flower
• 1/4 cup neutral oil (grapeseed or avocado)
• 2 scallions, finely sliced
• Pinch sea salt
Decarboxylation
Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.
Infusion
Warm oil to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly.
While still warm, stir in scallions and salt.
Let cool completely.
This oil contains the full THC content.
Step 2: Coconut Curry Filling (Non-Infused)
Ingredients
• 1 tablespoon olive oil
• 1/2 small onion, diced
• 1 cup diced potatoes
• 1/2 cup diced carrots
• 1 cup chopped spinach
• 1/2 cup coconut milk
• 1 tablespoon curry paste
• 1 teaspoon grated ginger
• Salt to taste
Sauté onion, potatoes, and carrots until softened.
Add curry paste and ginger.
Stir in coconut milk and simmer until thick.
Fold in spinach until wilted.
Cool completely before assembling.
Step 3: Hand Pie Assembly (Non-Infused)
Ingredients
• 2 sheets puff pastry, thawed
• 1 egg (for wash)
Preheat oven to 400°F.
Cut pastry into 12 rectangles.
Add spoonful of cooled curry filling to center.
Fold over and seal edges with fork.
Brush tops with egg wash.
Bake 18–22 minutes until golden and flaky.
Step 4: Emerald Finish
Once slightly cooled, brush each hand pie evenly with measured cannabis-infused scallion oil.
Serve warm.
