Cannabis-Infused “Emerald Cucumber Gin Granita with Lime Sugar”
Frozen Cocktail Series – St. Patrick’s Day
An icy, fork-scraped granita made from fresh cucumber juice, lime, and botanical gin, topped with sparkling lime sugar and micro-mint. The cannabis is infused into a measured simple syrup for precise control. Cold, bright, herbal, and completely different from anything fried, baked, or cheesy.
A Note on Dosing
This recipe makes 8 cocktail glasses.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into simple syrup)
~6–7mg per serving
Alternative Dosing:
• 1g flower → ~4–5mg per serving
• 2g flower → ~9–10mg per serving
Terpene Pairing Suggestion: Limonene enhances citrus; Pinene complements gin botanicals.
Step 1: Cannabis-Infused Simple Syrup
Ingredients
• 1.5g cannabis flower
• 1 cup water
• 1 cup sugar
Decarboxylation
- Preheat oven to 225°F (107°C).
- Break flower into small pieces.
- Spread on parchment-lined sheet.
- Bake 35–40 minutes.
- Cool completely.
Infusion
- Combine water and sugar in saucepan; heat until dissolved.
- Cool syrup slightly to 170°F.
- Add decarboxylated cannabis.
- Maintain 160–170°F for 2 hours (do not boil).
- Stir every 15 minutes.
- Strain thoroughly through cheesecloth.
- Chill completely.
Step 2: Granita Base
Ingredients
• 2 cups fresh cucumber juice (blend & strain cucumbers)
• ½ cup fresh lime juice
• ¾ cup cannabis-infused simple syrup
• 1 cup gin
• Pinch sea salt
- Whisk all ingredients together until fully combined.
- Pour into shallow metal baking dish.
Step 3: Freeze & Scrape
- Freeze for 45 minutes.
- Scrape surface with fork to create crystals.
- Return to freezer.
- Repeat scraping every 30 minutes for 3–4 hours until fully flaky and icy.
Step 4: Lime Sugar
Ingredients
• ¼ cup sugar
• Zest of 1 lime
- Mix zest into sugar.
- Rub together until fragrant.
Step 5: Serve
- Spoon granita into chilled glasses.
- Sprinkle lime sugar lightly over top.
- Garnish with micro-mint.
