Cannabis-Infused Emerald Dark Chocolate Mint Lava Cookies

Deep. Molten. Late-night indulgence.

These St. Patrick’s Day lava cookies bake up crisp on the outside and release a flowing emerald mint center when cracked open. The infusion lives entirely in the molten mint ganache core for consistent dosing and dramatic presentation.


A Note on Dosing

This recipe makes 12 lava cookies.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into mint ganache)
~4–5mg per cookie
~8–10mg per 2-cookie serving

For lighter servings:
• 1g flower → ~6–7mg per 2-cookie serving
• 2g flower → ~12–14mg per 2-cookie serving


Step 1: Cannabis-Infused Heavy Cream

Ingredients

• 1.5g cannabis flower
• 3/4 cup heavy cream

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Warm heavy cream to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 1.5–2 hours.
Strain thoroughly and chill.

This cream contains the full THC content.


Step 2: Emerald Mint Ganache Core (Infused)

Ingredients

• 1/2 cup cannabis-infused cream
• 1 cup dark chocolate chips
• 1/2 teaspoon peppermint extract
• Small pinch matcha for emerald tone

Heat infused cream until just steaming.
Pour over dark chocolate and let sit 1 minute.
Stir until smooth.

Add peppermint extract and matcha.

Chill until firm enough to scoop.

Scoop 12 small balls and freeze 30 minutes.


Step 3: Dark Chocolate Cookie Dough (Non-Infused)

Ingredients

• 1/2 cup butter, softened
• 3/4 cup brown sugar
• 1 egg
• 1 teaspoon vanilla
• 1 cup flour
• 1/3 cup cocoa powder
• 1/2 teaspoon baking soda
• Pinch salt

Cream butter and sugar.
Add egg and vanilla.

Mix dry ingredients separately, then combine.

Chill dough 30 minutes.


Step 4: Assemble

Preheat oven to 350°F.

Flatten dough portions.
Place frozen ganache ball in center.
Seal dough completely around filling.

Bake 10–12 minutes until edges set but centers soft.

Cool 5 minutes before serving.
