Cannabis-Infused “Emerald Herb-Crusted Atlantic Salmon with Charred Asparagus”
Salmon has long been central to Irish coastal cuisine, especially along the Atlantic. This version keeps the technique grounded and executable: a properly seared salmon fillet with a fresh herb crust and bright green asparagus. The infusion lives in a controlled lemon-herb finishing oil, brushed over the salmon just before serving for precise dosing without compromising texture.
This recipe serves 4 plates.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into finishing oil).
~12–14mg per plate.
For lighter servings: • 1g flower → ~8–9mg per plate
• 2g flower → ~16–18mg per plate
• 1.5g cannabis flower
• 1/2 cup olive oil
• Zest of 1 lemon
• 1 tablespoon chopped parsley
• 1 teaspoon chopped dill
Decarb cannabis at 225°F for 35–40 minutes.
Infuse oil at 160–170°F for 2 hours.
Strain thoroughly.
Stir in lemon zest and herbs once cooled.
All THC is in this oil.
• 1/2 cup fresh parsley
• 2 tablespoons dill
• 1/4 cup panko breadcrumbs
• 1 tablespoon Dijon
• Salt & black pepper
Pulse herbs and breadcrumbs together until coarse and vibrant green.
• 4 skin-on Atlantic salmon fillets
• Salt
• Black pepper
Pat salmon dry.
Sear skin-side down in hot pan 4–5 minutes.
Flip briefly.
Brush top lightly with Dijon.
Press herb crust onto surface.
Finish in 375°F oven 5–7 minutes until medium.

• Olive oil
• Salt
Sear or roast until lightly blistered.
Brush measured cannabis-infused lemon herb oil over salmon after cooking.
Do not cook the infused oil — keep potency stable.
Plate with asparagus.
