Cannabis-Infused Emerald Honey Lime Street Corn Cups

Creamy, tangy, smoky, and totally different from anything we’ve done. These handheld street corn cups layer charred sweet corn with cotija, chili-lime seasoning, and a glossy emerald cannabis-infused honey lime drizzle. Built for late-night St. Patrick’s Day snacking with clean portion control.


A Note on Dosing

This recipe makes 8 street corn cups.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into honey lime drizzle)
~6–7mg per cup

For lighter servings:
• 1g flower → ~4–5mg per cup
• 2g flower → ~8–9mg per cup


Step 1: Cannabis-Infused Honey

Ingredients

• 1.5g cannabis flower
• 1/2 cup honey

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Place honey in heatproof jar.
Stir in decarboxylated cannabis.

Set jar in saucepan of gently simmering water (water below lid).
Maintain low heat for 2 hours.
Strain thoroughly while warm.

This honey contains the full THC content.


Step 2: Emerald Honey Lime Drizzle (Infused)

Ingredients

• 1/3 cup cannabis-infused honey
• Zest of 1 lime
• 2 tablespoons fresh lime juice
• Small pinch matcha (for emerald tone)
• Pinch sea salt

Whisk until smooth.


Step 3: Street Corn Base (Non-Infused)

Ingredients

• 4 cups fresh or frozen sweet corn
• 1 tablespoon butter
• 1/2 teaspoon smoked paprika
• 1/2 teaspoon chili powder
• 1/3 cup mayonnaise
• 1/2 cup crumbled cotija cheese
• 1/4 cup chopped cilantro

Char corn in skillet with butter until lightly blistered.

Stir in paprika and chili powder.
Remove from heat and mix with mayonnaise.

Fold in cotija and cilantro.


Step 4: Assemble Cups

Divide corn mixture evenly into 8 serving cups.

Drizzle measured emerald honey lime sauce evenly over each portion.

Finish with:

• Extra cotija
• Lime wedge
• Light chili sprinkle

Serve warm.
