Cannabis-Infused “Emerald Irish Breakfast Flatbread”

Savory Breakfast Series – St. Patrick’s Day

Crisp flatbread layered with smashed baby potatoes, Irish cheddar, soft scrambled eggs, sautéed leeks, and crumbled breakfast sausage, finished with a measured drizzle of cannabis-infused chive oil. Hearty, savory, and built for a slow St. Patrick’s morning.


A Note on Dosing

This recipe makes 6 flatbread portions.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into chive oil)
~8–9mg per portion

Alternative Dosing:
• 1g flower → ~5–6mg per portion
• 2g flower → ~12–14mg per portion

Terpene Pairing Suggestion: Caryophyllene-forward strain enhances sausage spice; Pinene complements fresh chives.


Step 1: Cannabis-Infused Chive Oil

Ingredients

• 1.5g cannabis flower
• ½ cup light olive oil
• ¼ cup fresh chives, finely chopped

Decarboxylation Method

  1. Preheat oven to 225°F (107°C).
  2. Break cannabis into small pieces.
  3. Spread on parchment-lined baking sheet.
  4. Bake 35–40 minutes.
  5. Cool completely.

Infusion Method

  1. Heat olive oil to 160–170°F.
  2. Add decarboxylated cannabis.
  3. Maintain temperature for 2 hours, stirring every 15 minutes.
  4. Strain thoroughly through cheesecloth.
  5. Stir in chopped chives once oil cools slightly.
  6. Refrigerate until ready to use.

Shelf life: 7–10 days refrigerated.


Step 2: Breakfast Toppings

Ingredients

• 2 flatbreads or naan
• 1 cup baby potatoes, boiled and smashed
• 4 eggs
• ½ cup heavy cream
• ½ pound breakfast sausage
• 1 leek, thinly sliced
• 1 cup shredded Irish cheddar
• Salt and black pepper

  1. Preheat oven to 400°F (204°C).
  2. Brown sausage in skillet; remove and set aside.
  3. In same pan, sauté sliced leeks until soft.
  4. Whisk eggs with cream, salt, and pepper.
  5. Soft scramble eggs over low heat until just set (slightly creamy).

Step 3: Assemble & Bake

  1. Place flatbreads on baking sheet.
  2. Spread smashed potatoes evenly over surface.
  3. Add sausage and sautéed leeks.
  4. Sprinkle cheddar generously.
  5. Bake 6–8 minutes until cheese melts.

Step 4: Dose & Finish

  1. Remove flatbreads from oven.
  2. Spoon soft scrambled eggs over top.
  3. Drizzle 1½ tablespoons cannabis-infused chive oil per flatbread.
  4. Slice into thirds.
