Crisp flatbread layered with smashed baby potatoes, Irish cheddar, soft scrambled eggs, sautéed leeks, and crumbled breakfast sausage, finished with a measured drizzle of cannabis-infused chive oil. Hearty, savory, and built for a slow St. Patrick’s morning.
A Note on Dosing
This recipe makes 6 flatbread portions.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into chive oil)
~8–9mg per portion
Alternative Dosing:
• 1g flower → ~5–6mg per portion
• 2g flower → ~12–14mg per portion

Step 1: Cannabis-Infused Chive Oil
Ingredients
• 1.5g cannabis flower
• ½ cup light olive oil
• ¼ cup fresh chives, finely chopped
Decarboxylation Method
- Preheat oven to 225°F (107°C).
- Break cannabis into small pieces.
- Spread on parchment-lined baking sheet.
- Bake 35–40 minutes.
- Cool completely.
Infusion Method
- Heat olive oil to 160–170°F.
- Add decarboxylated cannabis.
- Maintain temperature for 2 hours, stirring every 15 minutes.
- Strain thoroughly through cheesecloth.
- Stir in chopped chives once oil cools slightly.
- Refrigerate until ready to use.
Shelf life: 7–10 days refrigerated.
Step 2: Breakfast Toppings
Ingredients
• 2 flatbreads or naan
• 1 cup baby potatoes, boiled and smashed
• 4 eggs
• ½ cup heavy cream
• ½ pound breakfast sausage
• 1 leek, thinly sliced
• 1 cup shredded Irish cheddar
• Salt and black pepper
- Preheat oven to 400°F (204°C).
- Brown sausage in skillet; remove and set aside.
- In same pan, sauté sliced leeks until soft.
- Whisk eggs with cream, salt, and pepper.
- Soft scramble eggs over low heat until just set (slightly creamy).
Step 3: Assemble & Bake
- Place flatbreads on baking sheet.
- Spread smashed potatoes evenly over surface.
- Add sausage and sautéed leeks.
- Sprinkle cheddar generously.
- Bake 6–8 minutes until cheese melts.
Step 4: Dose & Finish
- Remove flatbreads from oven.
- Spoon soft scrambled eggs over top.
- Drizzle 1½ tablespoons cannabis-infused chive oil per flatbread.
- Slice into thirds.
