Cold brew and Irish cream are a natural pairing — bold coffee depth balanced with silky sweetness. This St. Patrick’s Day float layers chilled cold brew, emerald vanilla bean ice cream, and a cannabis-infused Irish cream whip for a dessert drink that feels indulgent but portions cleanly. The infusion lives entirely in the whipped topping for precise control and consistent dosing.

A Note on Dosing


This recipe makes 4 floats.


Using 1.5g of 15% THC flower:


~55mg THC total (infused into whipped cream)

~12–14mg per float


For lighter servings:

• 1g flower → ~8–9mg per float

• 2g flower → ~16–18mg per float

Step 1: Cannabis-Infused Irish Cream Whip


Ingredients


• 1.5g cannabis flower

• 1 cup heavy cream

• 1/4 cup Irish cream liqueur

• 2 tablespoons powdered sugar


Decarboxylation


Preheat oven to 225°F (107°C).

Bake finely ground cannabis for 35–40 minutes. Cool completely.


Infusion


Warm heavy cream to 160–170°F (do not simmer).

Add decarboxylated cannabis.

Maintain low heat for 1.5–2 hours.

Strain thoroughly.

Chill completely.


Whip infused cream with Irish cream and powdered sugar until soft peaks form.


This whipped topping contains the full THC content.

Step 2: Emerald Ice Cream Layer (Non-Infused)


Ingredients


• 1 quart vanilla ice cream

• Small pinch matcha for light emerald tint


Soften slightly and stir in matcha just until evenly tinted.

Refreeze until firm.

Step 3: Assemble Floats


Ingredients


• 3 cups cold brew coffee (chilled)

• Emerald vanilla ice cream

• Cannabis-infused Irish cream whip

• Dark chocolate shavings


Scoop ice cream into tall glasses.

Pour cold brew slowly over ice cream.

Top generously with infused whip.

Finish with chocolate shavings.


Serve immediately.
