Cannabis-Infused “Emerald Jalapeño Cheddar Gougères”

Savory French-Inspired Party Bite – St. Patrick’s Day

Airy choux pastry puffs folded with sharp Irish cheddar and fresh jalapeño, baked until hollow and crisp outside, soft and steamy inside. The cannabis is infused into the butter used in the choux base for even distribution. Light, savory, and completely different from desserts and dips.

A Note on Dosing

This recipe makes 24 gougères.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into butter)

~2–3mg per gougère

~5–6mg per 2-piece serving

Alternative Dosing:

• 1g flower → ~3–4mg per 2-piece serving

• 2g flower → ~7–8mg per 2-piece serving

Terpene Pairing Suggestion: Caryophyllene enhances cheddar sharpness; Limonene brightens jalapeño heat.

Step 1: Cannabis-Infused Butter

Ingredients

• 1.5g cannabis flower

• 1 cup unsalted butter

Decarboxylation

Preheat oven to 225°F (107°C).

Break flower into small pieces.

Spread on parchment-lined sheet.

Bake 35–40 minutes.

Cool completely.

Infusion

Melt butter over very low heat.

Add decarboxylated cannabis.

Maintain temperature below 180°F (82°C) for 2 hours.

Stir every 15 minutes.

Strain thoroughly through cheesecloth.

Chill until solid.

Step 2: Choux Dough

Ingredients

• ½ cup water

• ½ cup whole milk

• ½ cup cannabis-infused butter

• 1 cup flour

• 4 large eggs

• 1 teaspoon salt

Preheat oven to 400°F (204°C).

In saucepan, combine water, milk, and infused butter.

Bring to rolling boil.

Add flour all at once.

Stir vigorously until dough forms and pulls from sides (2–3 minutes).

Remove from heat; cool 5 minutes.

Beat in eggs one at a time until glossy and smooth.

Step 3: Fold & Pipe

Ingredients

• 1½ cups shredded Irish cheddar

• 1 jalapeño, finely minced

Fold cheddar and jalapeño into dough.

Transfer to piping bag.

Pipe 1-inch mounds onto parchment-lined sheet.

Leave space between each puff.

Step 4: Bake

Bake 20–25 minutes until deep golden and puffed.

Do not open oven during first 15 minutes.

Cool slightly before serving.
