Cannabis-Infused Emerald Lime Cheesecake Cookie Cups

Bright, creamy, citrus-forward, and completely different from anything we’ve made so far. These St. Patrick’s Day cookie cups feature buttery graham cookie shells filled with emerald lime cheesecake mousse and finished with a glossy cannabis-infused lime glaze. The infusion lives entirely in the glaze for clean structure and precise dosing.


A Note on Dosing

This recipe makes 18 cookie cups.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into lime glaze)
~3mg per cookie cup
~6–9mg per 2–3 cup serving

For lighter servings:
• 1g flower → ~4–6mg per 2–3 cup serving
• 2g flower → ~10–12mg per 2–3 cup serving


Step 1: Cannabis-Infused Coconut Oil

Ingredients

• 1.5g cannabis flower
• 1/4 cup coconut oil

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Warm coconut oil to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly.

This oil contains the full THC content.


Step 2: Graham Cookie Cups (Non-Infused)

Ingredients

• 1 1/2 cups crushed graham crackers
• 1/3 cup melted butter
• 1/4 cup sugar

Preheat oven to 350°F.

Mix graham crumbs, butter, and sugar.
Press into greased mini muffin tin wells to form cups.

Bake 8–10 minutes until lightly golden.
Cool completely before filling.


Step 3: Emerald Lime Cheesecake Filling (Non-Infused)

Ingredients

• 8 ounces cream cheese, softened
• 1/2 cup powdered sugar
• Zest of 1 lime
• 2 tablespoons lime juice
• 1/2 cup whipped cream
• Small pinch matcha for emerald tint

Beat cream cheese and powdered sugar until smooth.
Add lime zest and juice.
Fold in whipped cream and matcha.

Pipe into cooled cookie cups.
Chill 1 hour.


Step 4: Cannabis-Infused Lime Glaze (Infused)

Ingredients

• 2 tablespoons cannabis-infused coconut oil
• 1/2 cup powdered sugar
• 1 tablespoon lime juice

Whisk until smooth and glossy.

Drizzle evenly over filled cookie cups.

Let set before serving.
