This modern St. Patrick’s Day version transforms that rustic classic into something vibrant and elegant. Earthy matcha provides a naturally emerald tone, balanced by pockets of melted white chocolate. The cannabis infusion is incorporated into a silky Irish cream drizzle, ensuring precise dosing without altering the custard texture.


A Note on Dosing

This recipe makes 8 servings.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into Irish cream drizzle)
~6–7mg per serving

For lighter servings:
• 1g flower → ~4–5mg per serving
• 2g flower → ~8–9mg per serving

All cannabis is infused into the drizzle for consistent distribution.


Step 1: Cannabis-Infused Irish Cream Drizzle

Ingredients

• 1.5g cannabis flower
• 1 cup heavy cream
• 1/4 cup Irish cream liqueur
• 2 tablespoons sugar

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Warm heavy cream to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 1.5–2 hours.
Strain thoroughly.

Whisk in Irish cream and sugar.
Chill until slightly thickened.

This drizzle contains the full THC content.


Step 2: Emerald Matcha Bread Pudding (Non-Infused)

Ingredients

• 6 cups cubed brioche or challah
• 2 cups whole milk
• 4 eggs
• 1/2 cup sugar
• 2 teaspoons matcha powder
• 1 teaspoon vanilla extract
• 1/2 cup white chocolate chips

Method

Whisk milk, eggs, sugar, matcha, and vanilla until smooth.
Fold in bread cubes and white chocolate.
Let soak 20 minutes.

Transfer to buttered baking dish.
Bake at 350°F for 35–40 minutes until set but slightly soft in center.

Cool slightly before slicing.


Step 3: Plate

Slice into squares.
Drizzle measured cannabis-infused Irish cream evenly over each portion.
Finish with:

• Powdered sugar
• White chocolate shavings
• Mint leaves

Do not heat drizzle after infusion.
