Fresh Atlantic fish has always played a central role in Irish coastal cuisine. This refined plate pairs flaky halibut with a naturally emerald pesto crust, creating bold color without artificial ingredients. The cannabis infusion is incorporated into a controlled lemon-garlic finishing oil that’s brushed over the fish after cooking, preserving potency and keeping technique clean and professional.
This recipe serves 4 plates.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into finishing oil)
~12–14mg per plate
For lighter servings:
• 1g flower → ~8–9mg per plate
• 2g flower → ~16–18mg per plate
All cannabis is infused into the finishing oil for consistent distribution.
• 1.5g cannabis flower
• 1/2 cup olive oil
• 1 clove garlic, lightly crushed
• Zest of 1 lemon
Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.
Warm olive oil to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly.
Stir in garlic and lemon zest once cooled.
Remove garlic before serving.
This oil contains the full THC content.
• 1/2 cup fresh basil
• 1/4 cup parsley
• 1/4 cup grated Parmesan
• 1/4 cup panko breadcrumbs
• 1 tablespoon olive oil
• Pinch salt
• Cracked black pepper
Pulse ingredients until coarse but vibrant green.
• 4 halibut fillets
• Salt
• Black pepper
• Olive oil
Pat fillets dry and season.
Sear in hot pan 2–3 minutes per side.
Top with pesto crust.
Finish in 375°F oven 6–8 minutes until flaky.
• 2 fennel bulbs, sliced

Roast at 400°F for 20–25 minutes until caramelized.
Plate roasted fennel.
Place halibut on top.
Brush measured cannabis-infused lemon garlic oil lightly over fish and around plate.
Do not heat infused oil after adding.

• Lemon wedge
• Flaky, mild halibut
• Bright herb crust
• Sweet roasted fennel
• Fresh lemon finish
