Cannabis-Infused Emerald Pineapple Serrano Glazed Meatballs

Sweet heat. Glossy finish. Late-night party energy.

These St. Patrick’s Day cocktail meatballs are seared until caramelized, then coated in a sticky emerald cannabis-infused pineapple serrano glaze. The infusion lives entirely in the glaze for bold flavor delivery and consistent dosing per portion.


A Note on Dosing

This recipe makes 24 cocktail meatballs.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into glaze)
~2–2.5mg per meatball
~8–10mg per 4-meatball serving

For lighter servings:
• 1g flower → ~6–7mg per 4-meatball serving
• 2g flower → ~12–14mg per 4-meatball serving


Step 1: Cannabis-Infused Sesame Oil

Ingredients

• 1.5g cannabis flower
• 1/4 cup sesame oil

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Warm sesame oil to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly.

This oil contains the full THC content.


Step 2: Pineapple Serrano Glaze (Infused)

Ingredients

• 2 tablespoons cannabis-infused sesame oil
• 1 cup pineapple juice
• 2 tablespoons soy sauce
• 2 tablespoons brown sugar
• 1 serrano pepper, finely minced
• 1 teaspoon rice vinegar
• 1 teaspoon cornstarch mixed with 1 tablespoon water
• Small pinch matcha (optional for emerald tone)

Simmer pineapple juice, soy sauce, sugar, serrano, and vinegar.

Whisk in cornstarch slurry and cook until thick and glossy.

Remove from heat and whisk in infused sesame oil and matcha.

Cool slightly.


Step 3: Meatballs (Non-Infused)

Ingredients

• 1 1/2 pounds ground beef or pork
• 1 egg
• 1/3 cup breadcrumbs
• 2 tablespoons finely chopped green onion
• 1 teaspoon grated ginger
• Salt & pepper

Preheat oven to 400°F.

Mix ingredients gently.
Form 24 small meatballs.

Bake 16–18 minutes until cooked through.


Step 4: Finish

Toss warm meatballs evenly in measured emerald glaze.

Garnish with:

• Sliced scallions
• Sesame seeds
• Micro cilantro

Serve warm with cocktail picks.
