A Note on Dosing:


This recipe makes 24 baklava rolls.


We calculate using 1.5g of 15% THC flower.


~55mg THC total (infused into honey-saffron syrup).

~2–2.5mg per roll.


Perfect for 4-roll ~8–10mg servings.

Step 1: Cannabis-Infused Honey Syrup


Ingredients:


• 1.5 grams cannabis flower

• 1/2 cup honey

• 1/4 cup water

• 1 tablespoon lemon juice

• Pinch saffron (optional)


Decarboxylation:


225°F for 35–40 minutes.


Infusion:


Warm honey gently.

Add decarbed cannabis.

Maintain 160–170°F for 1.5 hours.

Strain thoroughly.


Then:


Simmer honey, water, lemon, saffron 5 minutes.

Cool completely.


All THC is in this syrup.

Step 2: Pistachio Filling


• 2 cups finely chopped pistachios

• 1/4 cup sugar

• 1 teaspoon cinnamon

• Pinch salt


Mix well.

Step 3: Assemble Rolls


• 12 sheets phyllo dough

• 1/2 cup melted butter (non-infused)


1. Layer 3 sheets phyllo, brushing butter between each.



2. Spread pistachio filling evenly.



3. Roll tightly into log.



4. Slice into 2-inch spirals.



5. Place cut-side up in baking dish.




Repeat until 24 rolls.

Step 4: Bake


Bake at 350°F (177°C) for 30–35 minutes until golden and crisp.


Immediately spoon cooled infused honey syrup over hot rolls.


Let absorb at least 4 hours.
