Shortbread has long been a staple across Ireland and the UK, known for its rich butter base and delicate crumb. This St. Patrick’s Day version folds finely ground pistachios into the dough for a naturally emerald hue, then finishes each coin with a drizzle of white chocolate. The cannabis infusion is incorporated directly into the butter for even distribution and precise portioning.


A Note on Dosing

This recipe makes 24 shortbread coins.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into butter)
~4–5mg per cookie
~8–10mg per 2-cookie serving

For lighter servings:
• 1g flower → ~6–7mg per 2-cookie serving
• 2g flower → ~12–14mg per 2-cookie serving


Step 1: Cannabis-Infused Butter

Ingredients

• 1.5g cannabis flower
• 1 cup unsalted butter

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Melt butter over low heat (160–180°F).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly.
Chill until solid before baking.


Step 2: Shortbread Dough

Ingredients

• 1 cup cannabis-infused butter (softened)
• 1/2 cup powdered sugar
• 2 cups all-purpose flour
• 1/2 cup finely ground pistachios
• 1/4 teaspoon salt
• 1 teaspoon vanilla extract

Cream butter and sugar until smooth.
Mix in vanilla.
Fold in flour, pistachios, and salt until dough forms.

Roll into a log, wrap tightly, and chill 1 hour.


Step 3: Bake

Slice into 1/4-inch rounds.
Place on parchment-lined sheet.

Bake at 325°F for 14–16 minutes until edges are just lightly golden.
Cool completely.


Step 4: White Chocolate Finish

Ingredients

• 4 ounces white chocolate

Melt in 20-second bursts, stirring between each.
Drizzle over cooled cookies.
Sprinkle with finely chopped pistachios.

Allow chocolate to set fully.
