A Note on Dosing
This recipe makes 6 tasting plates.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into cucumber basil oil)
~8–9mg per plate
Alternative Dosing:
• 1g flower → ~5–6mg per plate
• 2g flower → ~12–14mg per plate

Step 1: Cannabis-Infused Cucumber Basil Oil
Ingredients
• 1.5g cannabis flower
• ½ cup light olive oil
• ½ cup peeled cucumber, finely diced
• ¼ cup fresh basil leaves
Decarboxylation Method
- Preheat oven to 225°F (107°C).
- Break cannabis into small pieces.
- Spread on parchment-lined baking sheet.
- Bake 35–40 minutes.
- Cool completely.
Infusion Method
- Heat olive oil to 160–170°F.
- Add decarboxylated cannabis.
- Maintain temperature for 2 hours, stirring every 15 minutes.
- Strain thoroughly through cheesecloth.
- Blend infused oil with cucumber and basil until vibrant green.
- Strain again for smooth clarity.
- Chill completely.
Shelf life: 7 days refrigerated.
Step 2: Scallop Base
Ingredients
• 12 fresh sea scallops (sushi-grade)
• Juice of 1 lime
• Flaky sea salt
• Fresh cracked white pepper
• Microgreens
- Pat scallops completely dry.
- Slice horizontally into thin discs.
- Arrange in shamrock-style circle on chilled plates.
- Lightly brush with fresh lime juice.
- Season with sea salt and white pepper.
Step 3: Dose & Plate
- Using dropper or spoon, add 1 tablespoon cannabis-infused cucumber basil oil per plate in small droplets.
- Garnish with microgreens.
- Serve immediately.
