Cannabis-Infused “Emerald Shamrock Scallop Crudo”

Thin-sliced dayboat scallops dressed in bright lime, micro herbs, emerald oil droplets, flaky sea salt, and a precise cannabis-infused cucumber basil oil. Clean, chilled, elegant — built for refined dosing.


A Note on Dosing

This recipe makes 6 tasting plates.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into cucumber basil oil)
~8–9mg per plate

Alternative Dosing:
• 1g flower → ~5–6mg per plate
• 2g flower → ~12–14mg per plate

Terpene Pairing Suggestion: Limonene and Pinene-forward strain enhances citrus brightness and herbal freshness.


Step 1: Cannabis-Infused Cucumber Basil Oil

Ingredients

• 1.5g cannabis flower
• ½ cup light olive oil
• ½ cup peeled cucumber, finely diced
• ¼ cup fresh basil leaves

Decarboxylation Method

  1. Preheat oven to 225°F (107°C).
  2. Break cannabis into small pieces.
  3. Spread on parchment-lined baking sheet.
  4. Bake 35–40 minutes.
  5. Cool completely.

Infusion Method

  1. Heat olive oil to 160–170°F.
  2. Add decarboxylated cannabis.
  3. Maintain temperature for 2 hours, stirring every 15 minutes.
  4. Strain thoroughly through cheesecloth.
  5. Blend infused oil with cucumber and basil until vibrant green.
  6. Strain again for smooth clarity.
  7. Chill completely.

Shelf life: 7 days refrigerated.


Step 2: Scallop Base

Ingredients

• 12 fresh sea scallops (sushi-grade)
• Juice of 1 lime
• Flaky sea salt
• Fresh cracked white pepper
• Microgreens

  1. Pat scallops completely dry.
  2. Slice horizontally into thin discs.
  3. Arrange in shamrock-style circle on chilled plates.
  4. Lightly brush with fresh lime juice.
  5. Season with sea salt and white pepper.

Step 3: Dose & Plate

  1. Using dropper or spoon, add 1 tablespoon cannabis-infused cucumber basil oil per plate in small droplets.
  2. Garnish with microgreens.
  3. Serve immediately.
