Cannabis-Infused Emerald Sour Apple Gummy Clusters

Chewy, tart, glossy, and built for late-night St. Patrick’s Day snacking. These emerald gummy clusters combine sour apple gummies, crushed freeze-dried apples, and white chocolate shells infused with cannabis. The infusion stays in the chocolate coating for clean texture and consistent dosing in every cluster.

A Note on Dosing

This recipe makes 24 gummy clusters.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into white chocolate shell)
~2–2.5mg per cluster
~8–10mg per 4-cluster serving

For lighter servings:
• 1g flower → ~6–7mg per 4-cluster serving
• 2g flower → ~12–14mg per 4-cluster serving

Step 1: Cannabis-Infused Coconut Oil

Ingredients

• 1.5g cannabis flower
• 1/4 cup coconut oil

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Warm coconut oil to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly.

This oil contains the full THC content.

Step 2: Emerald White Chocolate Shell (Infused)

Ingredients

• 3 cups white chocolate chips
• 2 tablespoons cannabis-infused coconut oil
• Small pinch matcha for emerald tint

Melt white chocolate gently in 20-second bursts.
Stir in measured infused oil until smooth.
Add matcha for color.

Step 3: Gummy Core (Non-Infused)

Ingredients

• 2 cups sour apple gummy candies
• 1/2 cup crushed freeze-dried apples
• 1 tablespoon lemon zest

Mix gummies, apple pieces, and zest in bowl.

Step 4: Form Clusters

Spoon small mounds of gummy mixture onto parchment.

Spoon emerald chocolate over each mound to fully coat.

Sprinkle lightly with:

• Green sanding sugar
• Flaky sea salt

Let set completely at room temperature.
