Cannabis-Infused “Emerald Spinach & Ricotta Gnocchi with Burnt Sage Butter”


Spring in Ireland means fresh greens coming back into the kitchen. Spinach-based gnocchi is a real Northern Italian technique, but when folded into an Irish-inspired St. Patrick’s menu, the natural emerald tone feels right at home. These gnocchi are soft, pillowy, and vibrant green from fresh spinach purée — no artificial coloring. The infusion lives entirely in a measured sage butter drizzle so dosing remains precise and realistic.

A Note on Dosing:


This recipe serves 4 plates.


Using 1.5g of 15% THC flower:


~55mg THC total (infused into sage butter).

~12–14mg per plate.


For lighter servings: • 1g flower → ~8–9mg per plate

• 2g flower → ~16–18mg per plate

Step 1: Cannabis-Infused Butter (Sage Butter)


• 1.5g cannabis flower

• 1/2 cup unsalted butter


Decarb at 225°F for 35–40 minutes.

Infuse butter at 160–180°F for 2 hours.

Strain thoroughly.


All THC is in this butter.

Step 2: Spinach & Ricotta Gnocchi (Non-Infused)


Ingredients:


• 1 cup ricotta (well drained)

• 1 cup blanched spinach (squeezed dry & puréed)

• 1 egg yolk

• 1/2 cup grated parmesan

• 3/4 cup flour (plus extra for dusting)

• Salt & white pepper

• Pinch nutmeg


Method:


Mix ricotta, spinach purée, egg yolk, parmesan, salt, pepper, nutmeg.

Fold in flour gently until just combined.

Roll into ropes and cut into bite-sized pieces.

Dust lightly with flour.


Boil in salted water until they float (about 2 minutes).

Remove immediately.

Step 3: Burnt Sage Butter Finish


Heat measured cannabis-infused butter in pan.

Add fresh sage leaves.

Cook until butter turns lightly golden and fragrant.

Toss cooked gnocchi gently in butter.


Plate immediately.
