Cannabis-Infused “Emerald Spinach & Feta Hand Pies”

St. Patrick’s Day Savory Pastry with Infused Garlic Olive Oil

Flaky golden hand pies stuffed with sautéed spinach, whipped feta, caramelized shallots, and herbs. The infusion lives in a measured garlic olive oil brushed inside each pastry before sealing for even distribution and controlled dosing.


A Note on Dosing

This recipe makes 12 hand pies.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into garlic olive oil)
~4–5mg per hand pie

Alternative Dosing:
• 1g flower → ~3mg per hand pie
• 2g flower → ~7–8mg per hand pie

Terpene Pairing Suggestion: Myrcene-dominant strain complements baked pastry richness and savory feta.


Step 1: Cannabis-Infused Garlic Olive Oil

Ingredients

• 1.5g cannabis flower
• 1/3 cup extra virgin olive oil
• 2 cloves garlic, lightly crushed

Decarboxylation Method

  1. Preheat oven to 225°F (107°C).
  2. Break cannabis into small pieces.
  3. Spread on parchment-lined baking sheet.
  4. Bake 35–40 minutes.
  5. Cool completely.

Infusion Method

  1. Heat olive oil in saucepan to 160–170°F.
  2. Add decarboxylated cannabis and crushed garlic.
  3. Maintain temperature for 2 hours, stirring every 15 minutes.
  4. Strain thoroughly through cheesecloth.
  5. Cool and refrigerate.

Shelf life: 7 days refrigerated.


Step 2: Spinach & Feta Filling

Ingredients

• 3 cups fresh spinach, finely chopped
• ½ cup crumbled feta
• 1 small shallot, finely diced
• 1 tablespoon non-infused olive oil
• 1 tablespoon fresh dill, chopped
• Salt and cracked pepper

  1. Heat olive oil in skillet over medium.
  2. Sauté shallot 3–4 minutes until soft.
  3. Add spinach and cook until wilted.
  4. Remove from heat and cool slightly.
  5. Stir in feta, dill, salt, and pepper.
  6. Chill filling 20 minutes to firm.

Step 3: Pastry Assembly

Ingredients

• 2 sheets puff pastry, thawed
• 1 egg, beaten (egg wash)

  1. Preheat oven to 400°F.
  2. Roll pastry slightly thinner.
  3. Cut into 12 equal rectangles.
  4. Brush inside of each rectangle lightly with ½ teaspoon infused garlic oil.
  5. Add 1–2 tablespoons filling to center.
  6. Fold over and seal edges with fork.
  7. Brush tops with egg wash.
  8. Cut small vent slit on top of each.

Step 4: Bake

  1. Bake 18–22 minutes until golden brown.
  2. Cool 10 minutes before serving.
