These St. Patrick’s Day popcorn clusters balance creamy emerald white chocolate with subtle wasabi warmth, toasted sesame, and fine shards of nori. The infusion lives entirely in the white chocolate base for consistent structure and clean portion control.

A Note on Dosing

This recipe makes 20 popcorn clusters.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into white chocolate)
~2–3mg per cluster
~6–9mg per 2–3 cluster serving

For lighter servings:
• 1g flower → ~4–5mg per 2–3 cluster serving
• 2g flower → ~10–12mg per 2–3 cluster serving


Step 1: Cannabis-Infused Cocoa Butter

Ingredients

• 1.5g cannabis flower
• 1/4 cup cocoa butter (or refined coconut oil)

Decarboxylation

Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.

Infusion

Melt cocoa butter gently to 160–170°F.
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly.

This fat contains the full THC content.


Step 2: Emerald White Chocolate Base (Infused)

Ingredients

• 12 ounces high-quality white chocolate
• 2 tablespoons cannabis-infused cocoa butter
• 1/2 teaspoon wasabi powder (adjust to taste)
• Pinch matcha (for subtle emerald tone)

Melt white chocolate gently in double boiler.

Stir in infused cocoa butter until smooth.

Whisk in wasabi powder and matcha until evenly blended.


Step 3: Assemble Clusters

Ingredients

• 6 cups air-popped popcorn
• 1 tablespoon toasted sesame seeds
• 1 tablespoon finely shredded nori
• Pinch flaky sea salt

Place popcorn in large bowl.

Pour infused white chocolate mixture over popcorn.

Fold gently to coat evenly.

Sprinkle sesame seeds and nori while still wet.

Scoop into 20 cluster mounds on parchment-lined tray.

Let set at room temperature until firm.
