Cannabis-Infused “Emerald Whiskey-Smoked Oysters”

Fresh oysters roasted directly over hardwood coals, kissed with Irish whiskey steam, finished with cannabis-infused scallion oil and cracked pepper. Briny, smoky, sharp, and unmistakably St. Patrick’s.
A Note on Dosing
This recipe makes 12 fire-roasted oysters.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into scallion oil)
~4–5mg per oyster
~8–10mg per 2-oyster serving
Alternative Dosing:
• 1g flower → ~5–6mg per 2-oyster serving
• 2g flower → ~12–14mg per 2-oyster serving
Terpene Pairing Suggestion: Limonene-forward strain enhances citrus and brine; Caryophyllene complements smoke and whiskey heat.
Step 1: Cannabis-Infused Scallion Oil
Ingredients
• 1.5g cannabis flower
• ½ cup grapeseed oil
• ¼ cup finely sliced scallions
Decarboxylation Method
- Preheat oven to 225°F (107°C).
- Break cannabis into small pieces.
- Spread on parchment-lined baking sheet.
- Bake 35–40 minutes.
- Cool completely.
Infusion Method
- Heat grapeseed oil to 160–170°F.
- Add decarboxylated cannabis.
- Maintain temperature for 2 hours, stirring every 15 minutes.
- Strain thoroughly through cheesecloth.
- Stir in sliced scallions after cooling slightly.
- Refrigerate until ready to use.
Step 2: Live Fire Setup
Ingredients
• 12 fresh oysters (in shell)
• 2 tablespoons Irish whiskey
• Fresh cracked black pepper
• Lemon wedges
- Build hardwood coal bed in grill.
- Allow flames to reduce to steady hot coals.
- Place oysters directly on grill grates over heat.
- Close lid and cook 4–6 minutes until shells begin to pop open.
Step 3: Finish & Dose
- Carefully pry open oysters.
- Add a few drops of Irish whiskey into each shell.
- Spoon ½ teaspoon cannabis-infused scallion oil per oyster.
- Crack fresh pepper over top.
- Serve immediately with lemon wedges.
