As spring arrives and heavier winter dishes fade, fresh green vegetables take center stage. This elegant zucchini ribbon ravioli captures that seasonal shift beautifully. Instead of traditional pasta, delicate ribbons of zucchini wrap around a creamy lemon burrata filling, creating a light yet indulgent dish. Finished with a bright cannabis-infused lemon herb oil, it delivers vibrant flavor, refined presentation, and precise dosing for a memorable St. Patrick’s Day dinner.
This recipe serves 4 plates.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into the finishing oil)
~12–14mg per plate
For lighter servings:
• 1g flower → ~8–9mg per plate
• 2g flower → ~16–18mg per plate
All cannabis is infused into the finishing oil to ensure consistent distribution.
• 1.5g cannabis flower
• 1/2 cup olive oil
• Zest of 1 lemon
• 1 tablespoon chopped basil
• 1 tablespoon chopped parsley
Preheat oven to 225°F (107°C).
Spread finely ground cannabis on parchment-lined sheet.
Bake 35–40 minutes. Cool completely.
Warm olive oil to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 2 hours.
Strain thoroughly through cheesecloth.
Once cooled, stir in lemon zest and fresh herbs.
Set aside. This oil contains the full THC content.
• 2 balls burrata
• 1 tablespoon fresh lemon juice
• Pinch salt
• Fresh cracked black pepper
Gently blend until creamy but still slightly textured.
Chill until ready to assemble.
• 4 large zucchini
Slice lengthwise into thin ribbons using a mandoline or vegetable peeler.
Lightly salt and let rest 10 minutes.
Pat dry thoroughly with paper towels.
Lay two zucchini ribbons in a cross pattern.
Add a spoonful of burrata filling in the center.
Fold ends over to form a square “ravioli.”
Repeat and chill briefly to help hold shape.
Place 3–4 ravioli per plate.
Drizzle a measured portion of cannabis-infused lemon herb oil evenly over each serving.
Finish with:

• Fresh cracked pepper
