Cannabis-Infused French Onion Beef & Gruyère Stuffed Bread


A whole crusty boule hollowed and packed with deeply caramelized onion jam, shaved roast beef, and melted Gruyère, finished with a rich French onion gravy enriched with cannabis-infused butter. Baked until the crust crackles and the center turns molten and savory.

Using 1.5g of 15% THC flower:


~55mg THC total (infused into onion gravy butter)

~9mg per serving


Alternative Dosing:

• 1g flower → ~6mg per serving

• 2g flower → ~12mg per serving

Step 1: Cannabis-Infused Butter


Ingredients


• 1.5g cannabis flower

• 1 cup unsalted butter


Decarboxylation


1. Preheat oven to 225°F (107°C).



2. Grind cannabis evenly.



3. Spread on parchment-lined tray.



4. Bake 35–40 minutes until aromatic.



5. Cool completely.




Infusion


1. Melt butter over very low heat.



2. Add decarbed cannabis.



3. Maintain below 180°F for 2 hours.



4. Stir occasionally.



5. Strain through cheesecloth.




Reserve 4 tablespoons for gravy.

Step 2: Caramelized Onion Base


Ingredients


• 3 large yellow onions, thinly sliced

• 2 tbsp butter

• ½ tsp salt


Method


1. Melt butter in heavy skillet over medium-low heat.



2. Add onions and salt.



3. Cook slowly 35–45 minutes, stirring occasionally.



4. Continue until onions become dark golden and jam-like.



5. Set aside.

Step 3: French Onion Cannabis Gravy


Ingredients


• 4 tbsp cannabis-infused butter

• 2 tbsp flour

• 2 cups beef broth

• ½ cup dry white wine

• 1 tsp fresh thyme

• Salt and black pepper to taste


Method


1. Melt infused butter in saucepan over medium heat.



2. Whisk in flour to create a roux.



3. Cook 1 minute until lightly golden.



4. Slowly whisk in beef broth and wine.



5. Add thyme.



6. Simmer 8–10 minutes until thickened.

Step 4: Bread Assembly


Ingredients


• 1 large crusty sourdough boule

• 8 oz shaved roast beef

• 1½ cups shredded Gruyère


Method


1. Preheat oven to 375°F (190°C).



2. Cut top off boule and hollow interior.



3. Layer caramelized onions in bottom.



4. Add roast beef evenly.



5. Sprinkle Gruyère generously.



6. Spoon infused onion gravy over filling.



7. Replace bread top.

Step 5: Bake


1. Wrap bread loosely in foil.



2. Bake 20 minutes.



3. Remove foil and bake 10 more minutes to crisp crust.



4. Slice into wedges.
