Cannabis-Infused Garlic Herb Butter Chicken Thighs

Step 1: Decarboxylation

Ingredients

3g cannabis flower

Method

  1. Preheat oven to 225°F (107°C)
  2. Break cannabis into small pieces
  3. Spread evenly on parchment-lined baking sheet
  4. Bake 35–40 minutes
  5. Allow cannabis to cool completely

Step 2: Garlic Herb Cannabis Butter

Ingredients

½ cup unsalted butter
Decarboxylated cannabis
3 garlic cloves (minced)
1 tsp chopped thyme
1 tsp chopped rosemary
½ tsp sea salt

Method

  1. Melt butter over very low heat in a small saucepan.
  2. Add cannabis and maintain temperature between 160–180°F.
  3. Infuse gently for 2 hours, stirring occasionally.
  4. Strain through cheesecloth to remove plant material.
  5. Stir in garlic, thyme, rosemary, and salt while butter is warm.
  6. Set aside.

Step 3: Chicken Preparation

Ingredients

4 bone-in chicken thighs
2 tbsp olive oil
salt
black pepper

Method

  1. Preheat oven to 400°F.
  2. Pat chicken thighs dry.
  3. Season generously with salt and pepper.
  4. Heat olive oil in an oven-safe skillet over medium-high heat.
  5. Place chicken skin-side down and sear 5–6 minutes until golden and crispy.
  6. Flip chicken thighs.
  7. Add 2 tablespoons infused garlic herb butter to the pan.
  8. Transfer skillet to oven.
  9. Roast 20 minutes until internal temperature reaches 165°F.

Step 4: Finish

  1. Remove chicken from oven.
  2. Spoon melted garlic herb butter from the pan over the chicken.
  3. Rest 5 minutes before serving.
