Step 1: Decarboxylation
Ingredients
3g cannabis flower
Method
- Preheat oven to 225°F (107°C)
- Break cannabis into small pieces
- Spread evenly on parchment-lined baking sheet
- Bake 35–40 minutes
- Allow cannabis to cool completely
Step 2: Garlic Herb Cannabis Butter
Ingredients
½ cup unsalted butter
Decarboxylated cannabis
3 garlic cloves (minced)
1 tsp chopped thyme
1 tsp chopped rosemary
½ tsp sea salt
Method
- Melt butter over very low heat in a small saucepan.
- Add cannabis and maintain temperature between 160–180°F.
- Infuse gently for 2 hours, stirring occasionally.
- Strain through cheesecloth to remove plant material.
- Stir in garlic, thyme, rosemary, and salt while butter is warm.
- Set aside.
Step 3: Chicken Preparation
Ingredients
4 bone-in chicken thighs
2 tbsp olive oil
salt
black pepper
Method
- Preheat oven to 400°F.
- Pat chicken thighs dry.
- Season generously with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Place chicken skin-side down and sear 5–6 minutes until golden and crispy.
- Flip chicken thighs.
- Add 2 tablespoons infused garlic herb butter to the pan.
- Transfer skillet to oven.
- Roast 20 minutes until internal temperature reaches 165°F.
Step 4: Finish
- Remove chicken from oven.
- Spoon melted garlic herb butter from the pan over the chicken.
- Rest 5 minutes before serving.
