CANNABIS-INFUSED GARLIC PARMESAN PRETZEL BITES

Warm, buttery pretzel bites with crispy golden edges and soft chewy centers coated in infused garlic butter and freshly grated parmesan. These little snack bombs come out of the oven fluffy and tender, then get tossed in cannabis-infused garlic butter so every bite carries rich savory flavor. They’re simple enough for weeknight munchies but impressive enough for a party tray.

Step 1 — Decarboxylation

Ingredients

7 g cannabis flower

Instructions

  1. Preheat oven to 240°F (115°C).
  2. Break cannabis into small pea-sized pieces.
  3. Spread evenly on parchment-lined baking tray.
  4. Bake 40 minutes, stirring halfway through.
  5. Remove and allow to cool.

Step 2 — Cannabis Butter Infusion

Ingredients

1 cup unsalted butter
1 cup water
Decarboxylated cannabis

Instructions

  1. Add butter and water to saucepan over low heat.
  2. Once butter melts, stir in decarbed cannabis.
  3. Simmer gently 2–3 hours, stirring occasionally.
  4. Do not allow mixture to boil.
  5. Strain through cheesecloth into container.
  6. Refrigerate until butter solidifies.
  7. Remove hardened butter and discard water.

Step 3 — Pretzel Dough

Ingredients

2¼ tsp active dry yeast
1 cup warm water
1 tbsp sugar
2½ cups flour
1 tsp salt
2 tbsp melted butter

Instructions

  1. In a bowl combine warm water, sugar, and yeast.
  2. Let sit 5 minutes until foamy.
  3. Add flour, salt, and melted butter.
  4. Mix into a soft dough.
  5. Knead 6–8 minutes until smooth.
  6. Cover and let rise 45 minutes.

Step 4 — Shape Pretzel Bites

Risen dough

Instructions

  1. Divide dough into 4 ropes.
  2. Cut ropes into 1-inch pieces.
  3. Place pieces on parchment-lined tray.

Step 5 — Baking Soda Bath

Ingredients

4 cups water
¼ cup baking soda

Instructions

  1. Bring water and baking soda to a simmer.
  2. Drop dough pieces into bath for 20 seconds.
  3. Remove and place back on baking sheet.

Step 6 — Bake

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Bake pretzel bites 12–15 minutes until deep golden brown.

Step 7 — Garlic Infused Butter Finish

Ingredients

2 tbsp cannabis butter
1 clove garlic (minced)
¼ cup grated parmesan
½ tsp parsley

Instructions

  1. Melt cannabis butter on low heat.
  2. Add minced garlic and warm 30 seconds.
  3. Toss hot pretzel bites in garlic butter.
  4. Sprinkle with parmesan and parsley.

Dosing Guidance

If infusion contains 700 mg THC per cup butter:

Using 2 tbsp90–100 mg total THC

If batch yields 30 bites → about 3 mg per bite
