Step 1: Decarboxylation

Ingredients

3g cannabis flower

Method

  1. Preheat oven to 225°F (107°C)
  2. Break cannabis into small pieces
  3. Spread evenly on parchment-lined baking sheet
  4. Bake 35–40 minutes
  5. Allow cannabis to cool completely

Step 2: Cannabis-Infused Olive Oil

Ingredients

½ cup olive oil
Decarboxylated cannabis

Method

  1. Heat olive oil over very low heat in a saucepan.
  2. Add cannabis.
  3. Maintain 160–180°F.
  4. Infuse gently for 2 hours, stirring occasionally.
  5. Strain through cheesecloth.
  6. Set infused oil aside.

Step 3: Greek Chicken Marinade

Ingredients

1½ lbs boneless chicken thighs
2 tbsp cannabis-infused olive oil
2 tbsp lemon juice
3 garlic cloves (minced)
2 tsp oregano
1 tsp paprika
1 tsp salt
½ tsp black pepper

Method

  1. Combine marinade ingredients in a bowl.
  2. Add chicken and mix thoroughly.
  3. Marinate 30–60 minutes.
  4. Heat skillet or grill pan over medium-high heat.
  5. Cook chicken 6–8 minutes, turning occasionally until browned and cooked through.
  6. Slice chicken into strips.

Step 4: Assemble Gyro Plate

Ingredients

4 warm pita breads
1 cup chopped tomato
1 cup sliced cucumber
½ cup shredded lettuce
½ cup red onion slices
½ cup tzatziki sauce
fresh dill

Method

  1. Add sliced chicken to warm pita or plate.
  2. Top with tomato, cucumber, lettuce, and onion.
  3. Spoon tzatziki over the chicken.
  4. Finish with fresh dill.
