Cannabis-Infused "Love Letter" Strawberry & Rose Petal Jam

A Note on Dosing: This recipe makes approximately 1 pint (16 tablespoons) of infused jam. We calculate based on a 15% THC flower. You must calculate your own dose based on your cannabis potency. Ingredients:

· 1 gram cannabis flower (choose a sweet, floral strain to complement the strawberries and rose)
· 1/2 cup mild, high-quality honey (clover or orange blossom)

Decarboxylation Method:

1. Preheat oven to 225°F (107°C).
2. Finely grind cannabis flower and spread on parchment-lined baking sheet.
3. Bake for 35-40 minutes until lightly browned and fragrant. Cool completely.

Infusion Method:

1. In a small saucepan, gently warm the honey over the lowest possible heat until it becomes thin and runny. Do not simmer.

Step 2: The Jam Assembly

Ingredients:

· 1 lb (450g) fresh strawberries, hulled and halved (or frozen, thawed)
· 1 cup granulated sugar
· 1/4 cup fresh lemon juice (about 1 large lemon)

Method:

1. Macerate the Strawberries:

· In a large bowl, combine the strawberries, sugar, and lemon juice. Stir to coat. Let sit at room temperature for 1-2 hours, or covered in the refrigerator overnight. This draws out the berries' natural pectin and deepens flavor.

2. Cook the Jam:

3. Finish:

· Remove from heat. Stir in the rose water and vanilla extract.
· Skim off any foam that has risen to the top with a metal spoon.
· Let the jam cool in the pot for 5 minutes, then stir gently to redistribute the rose petals and fruit.

4. Jar:

· Carefully ladle the hot jam into your sterilized jar(s), leaving 1/4 inch headspace.
· Wipe the rim clean, seal with the lid, and process in a boiling water bath for 10 minutes if you want shelf-stable jam.
· Alternatively, let cool completely at room temperature, then refrigerate. This jam will keep in the refrigerator for up to 3 months.

5. The Final Touch:

· Before gifting or serving, sprinkle a few additional dried rose petals on top of the jam inside the jar for a beautiful, visible flourish.
