CANNABIS-INFUSED SMOKED PAPRIKA MAC & CHEESE BITES

Crispy fried mac and cheese cubes with a creamy smoked cheddar center. Finished with a light dusting of smoked paprika and cannabis-infused butter glaze, these soul food snack bites deliver crunchy outside, gooey inside comfort food energy in a perfect handheld form.

Step 1 — Decarboxylation

Ingredients

7 g cannabis flower

Instructions

  1. Preheat oven to 240°F (115°C).
  2. Break cannabis flower into small pieces.
  3. Spread evenly on a parchment-lined baking sheet.
  4. Bake 40 minutes, stirring halfway through.
  5. Allow to cool completely.

Step 2 — Cannabis Butter Infusion

Ingredients

1 cup unsalted butter
1 cup water
Decarboxylated cannabis

Instructions

  1. Melt butter and water together in saucepan on low heat.
  2. Add cannabis.
  3. Simmer gently 2–3 hours, stirring occasionally.
  4. Keep temperature low — do not boil.
  5. Strain through cheesecloth.
  6. Chill until butter solidifies.
  7. Remove hardened cannabis butter.

Step 3 — Mac & Cheese Base

Ingredients

2 cups cooked macaroni
2 tbsp cannabis butter
1 tbsp flour
1 cup milk
1½ cups shredded sharp cheddar
½ tsp smoked paprika
½ tsp garlic powder
½ tsp salt

Instructions

  1. Melt cannabis butter in saucepan.
  2. Whisk in flour and cook 1 minute.
  3. Slowly whisk in milk.
  4. Cook until thickened.
  5. Stir in cheddar cheese until melted.
  6. Add smoked paprika, garlic powder, and salt.
  7. Mix in cooked macaroni.
  8. Spread mixture into parchment-lined pan.
  9. Refrigerate 1–2 hours until firm.

Step 4 — Form & Fry

Ingredients

1 cup flour
2 eggs (beaten)
1½ cups panko breadcrumbs
Oil for frying

Instructions

  1. Cut chilled mac and cheese into cubes.
  2. Dredge cubes in flour.
  3. Dip in egg.
  4. Coat in panko breadcrumbs.
  5. Heat oil to 350°F (175°C).
  6. Fry 2–3 minutes until golden.
  7. Drain on paper towels.

If infusion contains 700 mg THC per cup butter

Using 2 tbsp cannabis butter

90–100 mg THC total

If batch yields 24 bites

4 mg THC per bite
