CANNABIS-INFUSED SWEET CORNBREAD FRITTER BITES

Little golden cornbread fritters fried until crispy and finished with warm cannabis-infused maple butter. These bite-sized soul food snacks combine sweet corn flavor, soft fluffy centers, and crunchy edges — perfect for sharing plates or late-night snack trays.

Step 1 — Decarboxylation

Ingredients

7 g cannabis flower

Instructions

  1. Preheat oven to 240°F (115°C).
  2. Break cannabis into small pieces.
  3. Spread on parchment lined baking sheet.
  4. Bake 40 minutes, stirring halfway through.
  5. Allow to cool completely.

Step 2 — Cannabis Maple Butter Infusion

Ingredients

1 cup unsalted butter
1 cup water
Decarboxylated cannabis
2 tbsp maple syrup

Instructions

  1. Melt butter and water together in saucepan over low heat.
  2. Add cannabis.
  3. Simmer gently 2–3 hours, stirring occasionally.
  4. Keep heat low — do not boil.
  5. Strain through cheesecloth.
  6. Chill until butter solidifies.
  7. Remove hardened cannabis butter and mix with maple syrup.

Step 3 — Cornbread Batter

Ingredients

1 cup cornmeal
½ cup flour
1 tsp baking powder
½ tsp salt
1 tbsp sugar
1 egg
¾ cup milk
½ cup sweet corn kernels

Instructions

  1. In bowl combine cornmeal, flour, baking powder, salt, and sugar.
  2. Whisk egg and milk together.
  3. Mix wet ingredients into dry ingredients.
  4. Fold in sweet corn kernels.
  5. Batter should be thick but scoopable.

Step 4 — Fry

Ingredients

Oil for frying
2 tbsp cannabis maple butter (for finishing)

Instructions

  1. Heat oil to 350°F (175°C).
  2. Drop tablespoon portions of batter into oil.
  3. Fry 2–3 minutes, turning until golden brown.
  4. Remove and drain on paper towels.
  5. Brush lightly with melted cannabis maple butter.

If infusion contains 700 mg THC per cup butter

Using 2 tbsp cannabis butter

90–100 mg THC total

If batch yields 24 fritters

4 mg THC per fritter
