Cannabis-Infused Truffle Mac & Crispy Prosciutto Cups

Individual baked mac & cheese cups with aged white cheddar, fontina, cracked black pepper, and a crisped prosciutto crown. Finished with a precisely dosed cannabis-infused truffle cream folded directly into the cheese base. Comfort food — structured, elegant, and portion-controlled.


A Note on Dosing

This recipe makes 6 individual mac cups.

Using 1.5g of 15% THC flower:

~55mg THC total (infused into truffle cream)
~9mg per mac cup

Alternative Dosing:
• 1g flower → ~6mg per cup
• 2g flower → ~12mg per cup

All THC is incorporated evenly into the cheese sauce before baking.


Step 1: Cannabis-Infused Heavy Cream

Ingredients:
• 1.5g cannabis flower
• 1 cup heavy cream

Decarboxylation

  1. Preheat oven to 225°F (107°C).
  2. Grind cannabis evenly.
  3. Spread on parchment-lined tray.
  4. Bake 35–40 minutes until lightly toasted and aromatic.
  5. Cool fully.

Infusion

  1. Heat heavy cream on lowest setting (keep under 180°F).
  2. Add decarbed cannabis.
  3. Maintain low heat for 2 hours. Do not boil.
  4. Strain through cheesecloth.
  5. Measure ¾ cup for recipe (reserve remainder for future use).

Step 2: Cheese Base

Ingredients:
• 8 oz elbow pasta
• 2 tbsp butter
• 2 tbsp flour
• ¾ cup cannabis-infused cream
• ½ cup whole milk
• 1 cup shredded white cheddar
• ½ cup shredded fontina
• 1 tsp truffle paste
• ½ tsp cracked black pepper
• Salt to taste

Method

  1. Cook pasta until just shy of al dente. Drain.
  2. In saucepan, melt butter over medium heat.
  3. Whisk in flour and cook 1 minute.
  4. Slowly whisk in infused cream and milk.
  5. Simmer gently until thickened.
  6. Stir in cheeses until melted.
  7. Add truffle paste and pepper.
  8. Fold in cooked pasta.

Step 3: Prosciutto Cups

Ingredients:
• 6 thin slices prosciutto

  1. Press each slice into muffin tin wells.
  2. Bake at 375°F for 8–10 minutes until crisp.
  3. Cool slightly — they will firm as they cool.

Step 4: Assemble & Bake

  1. Spoon mac mixture into greased muffin tin wells.
  2. Bake at 375°F for 15–18 minutes until lightly golden.
  3. Let rest 5 minutes.
  4. Top each mac cup with one crisp prosciutto cup.
