Method


1. Preheat oven to 225°F (107°C)



2. Break cannabis into small pieces



3. Spread on parchment lined baking tray



4. Bake 35–40 minutes

Ingredients


1 cup unsalted butter

Decarboxylated cannabis

3 cloves garlic smashed


Method


1. Melt butter in saucepan over low heat



2. Add cannabis and garlic



3. Maintain 160–180°F



4. Infuse 2 hours stirring occasionally



5. Strain through cheesecloth




Reserve 3 tablespoons for fries

Ingredients


3 large russet potatoes

Cold water

1 tbsp salt


Method


1. Cut potatoes into ¼ inch fries



2. Soak in cold water 30 minutes



3. Drain and pat completely dry

Ingredients


Neutral frying oil


Method


1. Heat oil to 325°F



2. Fry potatoes 4 minutes (first fry)



3. Remove and rest 10 minutes



4. Heat oil to 375°F



5. Fry again 3–4 minutes until crispy

Step 5: Truffle Parmesan Finish


Ingredients


3 tbsp cannabis garlic butter

1 tbsp truffle oil

½ cup grated parmesan

1 tbsp chopped parsley

½ tsp cracked black pepper

Salt to taste


Method


1. Toss hot fries with cannabis garlic butter



2. Add truffle oil



3. Sprinkle parmesan and parsley



4. Season with pepper and salt



5. Toss until evenly coated
