Cardamom Rose THC Marshmallows

Fluffy, pillowy marshmallows scented with aromatic cardamom and delicate rose – exotic, floral, melt-in-mouth luxury. Tastes like Turkish delight meets cloud, zero weed flavor.
Decarboxylation
2.2 g flower @ 22–25 % THC (or 1.1 g good kief)
240 °F for 40 minutes in sealed mason jar → ~432 mg usable THC
Infusion
1 cup (240 ml) water + ½ tsp liquid sunflower lecithin
Warm to 170 °F → add decarbed material → sous-vide 185 °F for 2 hours
Strain hard → crystal-clear 432 mg THC water (reduce slightly if needed for concentration)
Marshmallow Base
All 432 mg THC water (divided)
3 envelopes (21 g) unflavored gelatin
1½ cups (300 g) granulated sugar
1 cup (240 ml) light corn syrup
½ tsp ground cardamom (freshly ground for best aroma)
1–2 tsp rose water (food-grade, to taste)
Pinch fine salt
Pink food coloring (optional, few drops)
Dust
½ cup powdered sugar + ¼ cup cornstarch (mixed)
Steps
1. Bloom gelatin in ½ cup cold THC water in stand mixer bowl for 10 minutes.
2. In heavy pot: sugar + corn syrup + remaining ½ cup THC water → cook to 240 °F (soft-ball) without stirring.
3. With mixer on low: slowly pour hot syrup down side of bowl → add cardamom + rose water + salt + coloring.
4. Whip on high 10–12 minutes until thick, glossy, tripled in volume (cool to touch).
5. Spread into greased/parchment-lined 8×8 pan → smooth top → dust generously → rest uncovered 8+ hours (overnight best).
6. Cut into 36 cubes → toss in powdered sugar/cornstarch mix.

Airtight container → room temp 2 weeks

432 mg ÷ 36 = 12 mg exact per marshmallow
