Cast Iron Herb-Crusted Chicken with Roasted Garlic Cream

Step 1 — Decarboxylation
Ingredients
3.5 g cannabis flower (medium grind)
Instructions
- Preheat oven to 240°F / 115°C.
- Spread cannabis on a parchment-lined tray.
- Bake 35–40 minutes, stirring once halfway through.
- Allow to cool completely.
Step 2 — Cannabis Garlic Butter
Ingredients
1 cup unsalted butter
1 cup water
Decarboxylated cannabis
3 cloves garlic, smashed
1 sprig thyme
½ tsp black pepper
Instructions
- Melt butter and water in a saucepan over very low heat.
- Add cannabis, garlic, and thyme.
- Maintain 160–180°F temperature.
- Simmer gently 2 hours, stirring occasionally.
- Strain through cheesecloth.
- Chill until butter solidifies.
- Remove butter layer and discard water.
Step 3 — Herb Crust
Ingredients
½ cup fresh breadcrumbs
1 tbsp chopped rosemary
1 tbsp chopped thyme
2 tbsp grated parmesan
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
Instructions
- Mix breadcrumbs, herbs, parmesan, olive oil, salt, and pepper.
- Set aside.
Step 4 — Roast the Chicken
Ingredients
2 large chicken breasts
Salt and black pepper
1 tbsp olive oil
2 tbsp herb crust mixture
1 tbsp cannabis garlic butter
Instructions
- Preheat oven to 375°F.
- Season chicken with salt and pepper.
- Heat olive oil in a cast iron skillet.
- Sear chicken 3–4 minutes per side until golden.
- Spread herb crust over top of each breast.
- Dot with cannabis garlic butter.
- Transfer skillet to oven and roast 15 minutes.
Step 5 — Roasted Garlic Cream
Ingredients
1 head roasted garlic
1 cup heavy cream
¼ cup parmesan
½ tsp black pepper
1 tsp cannabis garlic butter
Instructions
- Squeeze roasted garlic into a saucepan.
- Add cream and simmer 5 minutes.
- Stir in parmesan and pepper.
- Finish with cannabis garlic butter.
To Serve
- Spoon roasted garlic cream onto plate.
- Slice herb-crusted chicken.
- Arrange over sauce.
- Finish with fresh thyme and cracked pepper.
