Chocolate-Covered Strawberry Canna-Espresso Affogato

Recipe Info

Yield: 2 Servings

Prep Time: 15 Minutes

Infusion Method: Infused Chocolate Ganache or Infused Simple Syrup

Terpene Pairing

Myrcene: Found in earthy strains like OG Kush, this terpene enhances the deep, roasted notes of the espresso and the richness of the dark chocolate while providing a deeply relaxing body effect.

Dosage Information

Standard Dose: 5mg to 10mg THC per serving. This is achieved by drizzling a measured amount of cannabis-infused chocolate ganache over each serving.

Ingredients List

4 scoops premium vanilla bean ice cream

2 shots freshly brewed hot espresso (about 2 ounces per serving)

1/2 cup fresh strawberries, sliced

4 dark chocolate-covered strawberries (for garnish)

2 tablespoons cannabis-infused chocolate ganache

1 teaspoon shaved dark chocolate

1 tablespoon toasted hazelnuts, finely chopped (optional)

Decarboxylation Instructions

Preheat oven to 240°F. Break cannabis flower into small pieces and spread evenly on a parchment-lined baking sheet. Bake for 30 to 40 minutes until the flower is light brown and decarboxylated.

Infusion Instructions

To make the infused ganache, heat 1/4 cup heavy cream in a small saucepan until simmering. Add your decarboxylated flower and steep on low heat for 20 minutes. Strain through a fine-mesh sieve. Pour the warm infused cream over 1/2 cup finely chopped dark chocolate. Let sit for 2 minutes, then stir until smooth and glossy.

Preparation Instructions

 * Place two scoops of vanilla bean ice cream into two chilled glass bowls or wide-rimmed dessert glasses.

 * Arrange a layer of sliced fresh strawberries around the base of the ice cream scoops.

 * Drizzle 1 tablespoon of the warm cannabis-infused chocolate ganache over the ice cream in each bowl.

 * Just before serving, pour 1 shot of hot espresso over each ice cream arrangement. The hot espresso will begin to melt the ice cream and ganache, creating a rich sauce.

 * Garnish each bowl with two chocolate-covered strawberries, shaved dark chocolate, and chopped hazelnuts.

 * Serve immediately with a dessert spoon.

Chef Tips

Timing is essential for an affogato. Ensure the espresso is brewed immediately before pouring so it is piping hot, contrasting with the frozen ice cream. For an extra layer of flavor, soak the sliced strawberries in a splash of balsamic glaze for 5 minutes before assembling.
